I had always felt bad for Thor after Thor from the future went back in time to Asgard and took mjolnir. The final arc of Tony Stark also comes from the first Avengers movie when Steve tells Tony that he's not the kind of guy to make the sacrifice play.
Also I'm surprised you didn't point out the fact that when Hulk and Rocket enter New Asgard you can briefly see on the Signpost "Vilkommen Til Tonsberg" meaning "Welcome to Tonsberg", Tonsberg being the Town/Village that Red Skull destroys at the beginning of Captain America: The First Avenger where the tesseract is hidden.

Cap and tony's journey actually perfectly mirror each other. Cap wanted to be more than the common man and lay down his life for the cause, always living in regret of what he lost. Tony wanted to live his life and avoid the responsibility of the world so as not to lose more, always living in regret for not doing enough. This is especially evident in civil war and pays out in end game. Where tony lays down his life for the cause. And cap becomes a common man to regain what he had lost.

5:47 the scan for gamma signature was done because the stones radiate gamma radiation. his glasses were checking to see if the signature matches with the stone he's looking for, if the box has one at all, which explains how he can find the stone in general. This also matches up with the detail hulk said at the end "it's mostly gamma", and the reasoning why they brought banner on to the project in the first avengers

I smiled when you point out the pez dispenser. I have it's twin sitting on my desk as we speak. Never would've noticed had you not pointed it out. Great video! Cheers from a fellow Canuck (Niagara region).

I disagree with how you said Cap already sacrificed himself when Tony didn't. Both of them willingly went to sacrifice themselves (Cap in his first movie and Tony in The Avengers) and in both situations they survived.

You forgot one: in the beginning, stark is playing paper football with nebula. He was flicking paper nonstop. As a result, he was able to flick antman far enough onto the case.
