Only eaten Garrick once and just had it plain on the braai with lemon-butter sauce, was really good but here it looks mega delicious! Well done!
Those garrick - from an Aussie perspective, it's like a queenfish made love to a tailor, and that's the progeny. Interesting species. I like ya vid's. Onya.

TopTip: when flouring fish fillets, drop them in a clean plastic shopping bag with cake flour. Seal with hand and shake around! No mess, no waste.

Very interesting fish, they look like a cross between a fish we catch (or maybe the south african lads do as well) in Australia called a Queen fish and a Tailor(Shad ). Beautiful species.

Was thinking of sharing some of my footage with you guys but think I might keep sharing on my page and try growing it, although I have been useless with it. I am originally from Port Elizabeth (so your vids bring back great memories), but moved to Dubai in 2015, and now in Cayman Islands. Catch and cooks will always be where its at for me.

Just get fennel and garlic and yoghurt and you have tzatsiki. A nice Greek dish
The flesh looks like a good combination of both white and dark game fish.

Which rods did you guys use?
Leery is very slimy how do you deal with all the slime. Slime tends to taint the meat when filleting the fish?
Use a wet cloth to wipe the fish off or pad it dry before filleting it. You can hang them to wind dry them in the shade before filleting but this can make the meat soft if left out too long
You can use a damp cloth or paper towel to wipe of the slime before filleting it.

Shouldn't hang fish by the tail like that or bend the tail if you're gonna release. Otherwise great on the release
