This game and Dragon's Lair both used mirrored levels just to increase the game play. They usually didn't happen consecutively though. With Dragon's Lair on DVD you had the option of just watching the game play itself through as if you were watching a movie and the levels would happen one way and the immediately show the reverse (I'm assuming that's the same way this video was done) but when actually playing the game this didn't happen. It was more random.
alfax I'm pretty sure this isn't the watch feature, just a complete reading of the laserdisc, because if the watch went through every death, it wouldn't be a watch feature.
Flipping the scenes (that could be flipped) also made it harder to memorize button combos to get through the scene. (Instead of L-R-L-L-R, suddenly it's R-L-R-R-L).
It looks like that because of the way it was animated. You can still "play", but it's kinda limited, like an interactive movie. So yeah, it's basically a movie, except some parts you have to decide

when I was playing the Sega CD port on an emulator the second and third levels are flipped just like you said
