    I make a farmers cheese that lasts about a week or so in the fridge. It's great to use as a cream cheese substitute. I use 1/2 gal. of (room temperature) pasteurized, cultured buttermilk, (not UHT) add 1 Tbsp. lemon juice, stir well and pour into 2 pyrex bowls. Covering it with a lid or parchment paper. I then bake it (from a cold oven) at 225° F for about 30 minutes. Turn off the oven and let it come to room temperature. I skim off the curds with a slotted spoon into cheese cloth and let it hang about an hour. Then I salt it, stirring well. I've also added herbs or a small amount of fruit jam for variety. Like l said it only lasts about a week or two but we eat ours up quick because it's so yummy. I added this recipe because I don't shop online and don't have access to rennet or calcium chloride and have found this recipe to be easy to make with what I have on hand. Blessings to you all.

      I make something similar. You can also use white vinegar instead of lemon. I bring mine to heat on the stove and then cut the heat add the vinegar and let set. Quarter cup vinegar to one gallon milk.

      your comment isn't very love and light even if you wanted it to be perceived like that. Children are children, whether they act out or not, it's normal, it's natural. Sometimes my kids are model citizens and sometimes they're not so you saying that the job is well done when they act a certain way is such a limited and sad way of looking at things. Please dont have kids.

    I'm in the UK, we have just spent a week on the island of Jersey, its in the channel Islands between the UK and France, the Milk, cream, butter that the Jersey cows produce is so good, they also produce some of the best new potatoes in the summer called Jersey Royals

      We had a brilliant time, and found out when we got home that our milkman can supply us with Jersey Butter, Cream and milk from a farm not to far from us that has a herd of Jersey Cows 😊

      When we use to milk cows, the extra milk was used to “water” the potatoes.. it made them fluffy and very white when cooked.. also the extras would also be fed to the pigs.

    Thank you for the teaching, and the fine example of a simple country family life, together…Mother and Father had nine children, born in 11 years, no twins. Seven girls and two boys, of which I am one. Next to the baby! We were raised on a ranch, and had three registered Guernsey cows, among all the other animals. They were beautiful milk cows, Bessy, Fanny and Flossey…..We, one of my brothers and one of my sisters and I, usually did the milking…all by hand…while Mother sanitized the gallon jars and got everything ready for straining the milk. We brought in about 12 gallons a day, and the milk was so rich, about half of the gallon, was pure cream. It was so delicious, it was wonderful! Mother set huge jugs of milk, by the wood heater, and from it made, buttermilk, butter, cottage cheese, with part of it, and with the other, She would skim off part of the cream and make whip cream, milkshakes, and Home Made Ice Cream! She loved making the Ice Cream! She liked to make new flavors…Mother made great Ice Cream! Everything from black walnut, to strawberry, pistachio, chocolate, strawberry, peach and apricot, blackberry and maple nut…whatever was available, And puddings, which we had for breakfast, often! She always said, it was just eggs and milk, and other good ingredients….She also sold milk a dollar a gallon, and bought me an old piano from a friend and customer, when I was 15…I loved her generous, kind ways…but the most important thing she did, almost daily, with all that she had to do, was to remind us, to “Be kind to one another, tenderhearted, forgiving one another, even as God, for Christ’s sake, forgave you.” Ephesians 4:32. 💞

      Like you, we had a lot of children. Our Mother had 7 children in 8 years. 5 boys and 2 girls. Then 6 years later I was born. 10 months after that, our Father died, leaving her with 8 children between the ages of 15 years and 10 months of age. She got $150.00 a month because our Father served in World War 1.
      Only the oldest 2 boys didn't graduate from High school, but the rest of us did. All of my Brothers served our Country. We had a farm, but no cow. We got milk wonderful milk from our Aunt Bessie and Uncle Henry Shepard. It was hard, but I loved my life. Still do, I got the old Home place, when we children divided the land! GOD bless

      That would be the difference in state laws, in Indiana it's illegal to sell raw milk so you have to keep your own goats or cow if you want raw milk. It varies widely state by state.

It's amazing to see how much more milk variety there is available in your American grocery store verses our Canadian stores. Very poor selection here.     This brings back such great memories from my childhood. I'm the oldest of 8 children and going "to town" was always an adventure. I was always counting heads whenever we would go somewhere. There were two incidents I remember leaving someone behind. We had a diry about 5 miles away. We brought our own jugs and it was a dollar a gallon. It was the best milk ever!     I am sensitive to dairy. I sneeze and get all congested in my sinuses. I love cheese!!!!! It's so hard to not eat it!!! Raw milk looks so wonderful to work with! I'm in Minnesota so I guess you can get it from a farmer at their farm and you need to bring your own container. I'd love to make cheese for my family!

    You're so lucky you are able to get raw milk, even in your grocery store.
    Up here in Canada we had a farmer near Toronto who had cow shares in his dairy herd. What happened, hus farm was raided, he was arrested, he was charged (for selling raw milk), went to court, found guilty, went to jail, almost lost his farm.

    What a wonderful grocery store. In Virginia you cannot purchase raw milk from the store or from a farmer (unless for feeding animals) You must be in a herd share to make it legal. Unfortunately, the herd shares are prohibitively expensive. So, I’m really glad to learn we can use regular pasteurized milk for cheese.

      Same in Colorado, there is no difference in "for feeding animals" talk to the farmer, they have to market it that way. We bought it for over a year and it was really good. It was a two hour round trip so that is why we stopped.

      Those are great prices! I’m from Ohio and in my area eggs are around $2-4/dozen and the raw milk (only through herd-share) comes to about $6/gallon. I buy non-homogenized milk that’s been vat pasteurized from a local farm for $4.

      Wow...that’s incredibly good prices!! Here in Maine pasture raised eggs run $4-$7 doz. We raise both organic layers and meat-birds; the meat-birds fetch about $27-$40 per 4-6 lb bird at market; we pick up our raw milk at the farm for $6.50 gallon. A2 raw milk is nearly impossible to find, a small dairy up north 3 hrs sells it but it’s pricey at nearly $10 gallon. Nothing here is cheap, it’s beautiful country but everything is so expensive.

    My sister and you are a lot of a like and oddly you 2 look alike.
    My sister only has one child though she has a heart shaped uterus that makes it hard to have any, the one child they had she called Grace, because by the grace of God she carried her to term.
    I wish I could post a photo for you of her.

    Great info. 🧀! We live far from town too. We keep an iced cooler in the van on food shopping day so all cold and frozen things stay cold. We used to get raw milk from a farmer who was threatened by the “industry” and was forced to stop selling. Was $1 per gallon. 😕.

    Goodnessme you have a big family,I have 2of my own and 2 of step children,now grown up and kids of their own.I found I had to make my own ,or go look for bargins.Taught my kids how to shop....they taught my grandkids .But these days I like to experiment wiith new cooking idears......and love to it store it away ,or give to the family....who love it.

    I was amazed to see raw milk in your store, not in Oregon! I found someone selling raw milk but she wanted $18 for a half gallon. I did find low pasteurized at New Seasons for $6 a half gal. so I plan to try my hand at cheese making, thanks!

    We don't have close to any variety of dairy products in our stores, that you have! Nor, are we allowed to buy NonFDA products from any small scale farmers. They receive a huge fine for selling it. Big envy here.
    Enjoyed your video. I'm 72, had a dairy cow for decades, and loved making homemade cheeses, and other dairy products. I miss it so much.

    Would it be good to start out with actual buttermilk or is the buttermilk what must be added to plain milk in order to go to the next steps toward curds?
    I have always disliked buttermilk to drink, but love it for cooking! So instead of buying buttermilk and being wasteful, I just use lemon in sweet milk to cause it to clabber! Works like a charm!

    If you have a good starter culture you can use ultra pasteurized just fine.

      You can! Try to stay away from the Ultra-Pasteurized though. That won't turn out well!

      Pretty sure she used buttermilk but many asked her the question, I think u have to join her class to find out. 🤔

    Well from New Mexico. It is illegal in New Mexico to buy or sell raw milk. Those of us that live near Texas, share with those who live in Dona Anna county, sometimes it’s my turn to go to Texas, which is only about 35 miles away. A grew up on raw milk so I’m really partial to rob milk! Make the best keyboard. My mother made the Wildberry the grill in the desert. Looking forward to this and many other recipes!

    In England, 'Raw Milk' is Unpasturised. You can only buy it direct from certain farmers. Otherwise all milk is Pasturised. You can then choose between Homogenised or Non Homogenised. Virtually all is Homogenised (a second heat treatment to stop milk and cream separating) but some Organic Whole Milk (full fat) is Non Homogenised so the cream separates and rises to the top.
    (Note: 9.44 & 9.59 Pasturising is a different process to Homogenising milk.)

    Yea, raw sold in the store is a no no in NC. (Don’t know why either.) we can’t even buy it from a farmer unless it’s for animal use.

    Have you ever had milk set curd after adding the culture but before adding the rennet? I just had that happen and have never seen/heard of it before.
