Laura, I do something similar with my Thanksgiving turkey. Instead of rosemary I use thyme, but the method is the same. Between the skin with the butter and lemon, and then I baste it with butter throughout. SO yummy.

You are making a dish for your family, you are not in restaurant, ... gloves ??? Why ? Just wash your hands, not ? Really like some of your recpies. Can understand the gloves, have MS (multiple sclerosis) in hospital, or other polluted areas, but at home, I do not use them.
I think she just doesn't want to handle the raw chicken for her own safety, as you can see at the end once its cooked she handles it quite liberally without the gloves .
