Oh, I forgot. What do you do with the left over shells? Shells can be used as mulch. I ordered a bag just to see what it looked like. It smelled just like chocolate and apparently it works well as mulch. It can also be used to make paper. I'm fascinated by the limitless potential of that very special cacao bean.

Would you make a video about the role of chocolate maker vs chocolatier? It seems like on the high end things get a little blurred? As chocolate maker do you deal with brokers to get your beans? Do the brokers take care of shipping and warehousing the beans? I would love to learn the logistics of the cacao trade from the perspective of the chocolate maker. Thank you for the video. How would you go about making canna cocoa butter chocolate? I am guessing that I would need to use cocoa powder as to not have too much fat in the chocolate. I actually want to make some canna chocolate that tastes good. I was thinking of flavoring them with lavender and other herbs. Also does paprika enhance the chocolate flavor? Thanks.
Can I make chocolate with caaco liquoer ( its available to purchase in powdered form) and then continue with the melanger by adding the rest of the ingredients, instead of starting from the cacao nibs? Would that still work? Thanks in advance :)
Tempering, like roasting, is more than just one temperature. It is a full process you really need to understand to master. Check out the site and look up tempering. For storing, cool and dry is fine. It requires nothing fancy and don't overthink it.

I live in the jungle in South America and there is lots of cacao here, I want to teach the locals how to make chocolate and start to do better things with cacao they produce. To help bring the region out of poverty. I need to become an expert in it myself first though
I have to wonder what the heck you are doing to your hands. You are discussing food with what appear to be extremely filthy finger nails, and then in another scene one fingernail looks severely bruised. I am very hesitant to purchase from you now.
So let's deal with this. What you are seeing is chocolate. I deal with chocolate and dealt with a LOT the day we were filming. And chocolate stains. This is literally our first set of videos and didn't know how it would show. As for the bruises, I make things and hands get hard treatment. Buy or not from us but I will state out right I think judging an entire business on a first video where we were learning, from years ago, isn't particularly fair. That of course is your call.

We just compost them. We've found they just get slimy and suffocate anything under them, including the plants you want.

Forever. Chocolate is shelf stable. it will go stale and that is a different conversation.
