    Could you use soy sauce in stead of the oyster sauce and dashi if the dashi isnt readily available near you?

      That can work too! If you still want some of the umami flavor might be worth trying some fish sauce too.

      Glad you enjoyed! Meal prep storage is definitely a topic for debate. Glass storage is really nice, but I’ve had some challenges with chips and cracks. Still looking for a good supplier of high quality and durable glass storage. 👍🏼

    where i live they dont sell dashi. what can i use instead of it?

      Dashi is often found at Asian markets like 99ranch near the dry seasonings. It’s often used as a soup base. Another good substitute if you can’t find dashi anywhere is trying finely ground up seasoned nori. It’s not quite the same but nori does have some umami flavor. Hope this helps! 👍🏼

      You can add whatever you like! The ingredients shared here are really just how I've grown up to enjoy fried rice, but fried rice is all about using whatever ingredients you have available to you and tuning the recipe to what you enjoy most! 😁

      Great question! I've never tried freezing it. All of the ingredients are freezable, so it's highly probable that you can freeze and then heat up again. I suggest freezing it in an air tight bag. There is a possibility that if you freeze and then reheat it, the rice may end up rather mushy.

      This version doesn't need it. All of the flavor comes from the oyster sauce and dashi.

    Ahhh never put my rice in the fridge after cooking. I'll try that. My rice is clumpy in the rice cooker. I clean my rice though. Stiilllllll clumpy

      Refrigerating the rice overnight helps dry it out a bit and makes it easier to cook with. If it's fresh out of the rice cooker you end up with mushy fried rice and that's a bad day.

      It's dangerous not to refrigerate after cooking. Spores grow after 30 mins

      I don't recommend freezing since the rice might end up mushy when you defrost and reheat it, but it's worth trying. It is hard to beat the quality of fresh fried rice. 😁

      Try to always wash your rice. Otherwise there's excess starch and your rice can get clumpy 😫
