      There are many well known cooking channels that covered this dish, but the trick is to have one feature that the competition hasn't.
      Time stamps are a simple yet good example

    Left over rice is the best for fried rice! Especially jasmine rice. You won't get the same results with brown rice

      1. Cook and cool the rice in the fridge for 12 hrs beforehand. This process forms resistant starch in the rice which is harder to digest, resulting in less calories.
      2. I’d reduce the weight of rice used slightly and replace it with extra veg/eggs/protein. More flavour anyway!

    You should have a "per 100g" calorie count in addition to the serving count as each serving probably isn't the same each time and it makes it easier to compare to other foods.

    My main way to reduce calories for this dish (and some other) is to play with the vegetables ratio, I just load it with carrots and mushrooms, peas also.

    The real genius of the low cal version (and correct me if I'm wrong here?)... looks like Basmati rice, yeah? Definitely a rice that takes moisture *super* elegantly.
    Also, someone we knew directed us here (for obvious reasons I guess lol), and I just have to say... we are of the same mind when it comes to that Adam Ragusea deep frying video. While I generally like Adam's stuff, I was aching to make a response to that - I had half a mind to make a video on "why deep frying at home is a GOOD idea". Simultaneously happy and disappointed that you beat me to it ;)

    My family has never planned to make fried rice. We usually just end up with fried rice because there's leftover rice and some random ingredients in the fridge. Nobody measured anything. But I LOVE how you broke it down and even measured out the ingredients so many others can enjoy it too!

      @@NikolaPlivelic I kinda feel like counting calories is unhealthy. It can be done properly but more often than not you start alienating certain foods. I just looked up the calories of general foods like rice, beans, eggs, etc and eat intuitively to hit my macros approximately. This frees my mind up and doesn't stop me from eating out with friends etc (I follow that 80/20 rule, not the actual number but the principle).

    We always cook rice the day before with a lot of water like the lo cal version. That way the rice becomes dryer and is still low cal. also marinade the chicken on the day before as a comperison

      Cooking it with more water doesn't actually make it low cal. the rice is still rice. Its just that if its really wet it weighs more and has a larger in volume, so your serving in reality is smaller in terms of the actual mass of the food while looking and feeling the same.

    I like how "making lower calorie substitutions" more than "sad abstinence" is your style. I've got folks pushing pre made low carb meal programs at me. I totally cook most of my food from scratch and want to lose 20 lbs by making it myself just less noodles, rice, potatoes, sugar, more veggies and watch portion size. Is this how you did your weight loss?

      This is what I did and I lost over 50 lbs. It's shocking how calorically dense things like pasta and rice are. 100 grams of cooked rice look so small at first.

    I always had more success making fried rice by leaving the cooked rice by itself overnight, it's drier but it's also bigger because you cook it with more than 1.2 cups of water, if you also want a better tasting rice, try throwing in a bouillon cube or curry powder, it still fries up really well.
    Using brown rice is also a good idea cause it's way, way larger than the white grain by itself and in general it has more fiber so you don't need as much to feel full, I know it's kind of straying from the "original" fried rice recipe but fuck it, cooking is about making it how you want it.

    Just want to say I value your channel so much. I am on a (slow) weight loss journey and I have realised that restriction and banning my favourite foods does the opposite for me so finding ways to adapt my loved foods has become a way of life and I'm so glad I've found videos focusing exactly on this topic. I'm surprised how many high cal things in some dishes can be subbed or even omitted and the end product still tastes so good.

    I’m disappointed he didn’t use overnight cooled rice. That’s the secret to making the best fried rice. It makes the rice less sticky and prevents it from clumping

      Meh... I would say there's two kinds of fried rice.
      Restaurant style fried rice, as featured in this video and "use up leftovers" style fried rice, which features cooking some extra rice one meal and leaving it in the fridge in anticipation of future leftovers.
      In general, fried rice is a method, rather than a recipe. A lot of stuff can find its way in there (and does, in my household). 😁

    im a young aspiring chef thats been cooking for 6 years now and this is the type of videos i like to see. Never would i have thought to change the rice ratio for a lower calorie dish!!! and im with you untill recently i have always had over mushy rice at home only within the last 6 months have i taken the time to dial in rice. I really appreciate your work with using genuine scientific reasoning for your decisions that is what keeps me watching simple recipes because as a cook i can tell you i know how to make fried rice. but as a content creator you have to spend hours of time doing research not only to be right but to make yourself stand out so it would be wrong to dismiss even a fried rice recipe if you are putting this much research into your videos. for that reason you have my support almost every video i have watched of yours has had at least one ahah moment for me and as someone that watches more cooking shows on youtube than anything else thats not easy to do. keep at it bro and best of luck on your youtube journey.

    Chinese cooking demystified is so good!!! Chef Wang Gang is also a great resource for Chinese recipes as well as technical aspects of different dishes.. there’s also SO MANY people in the Chinese countryside who post videos showcasing different provinces country style cooking... I’ve kinda become obsessed with Chinese cooking over the last year or so lol

    For even lower calories you can make cauliflower fried rice, the texture resembles rice and it has a somewhat sweet flavor. Definitely recommend it.

    Just discovered your channel a couple weeks ago and I’m so glad that so many others are finding you too. I think a great video idea would be displaying useful kitchen tools not often seen on other RUclips channels, such as your griddle and why you may prefer it over popular items such as a cast iron skillet.

    To lower the calorie count I recommend increasing the vegetable portion and decreasing the rice portion.
    The main cause of calories in the fried rice is mainly the rice itself.

      If you roast cauliflower rice you actually end up with a much more flavorful base than normal rice, but still a very "ricey" feel. It's a great sub for rice actually

      Maybe it is ,but personally I couldnt make cauliflower nearly as tasty as normal rice. Maybe I just dislike cauliflower but it is what it is.

      @@JoshXII For me you get the best of both worlds with a 1:1 ratio of cauliflower rice (thoroughly sauteed over high heat until the moisture is mostly gone and you have some nice browning) and real rice-- the cauliflower rice is sort of a hybrid between acting as a rice substitute and being a vegetable add-on in its own right.

    Big tip for making fried rice: Use mixed grains or brown rice. The rougher texture lends itself nicely to fried rice, and you get more fiber/nutrients than white rice at the same weight. It also looks a lot nicer
    Edit: Would also recommend chicken breast or even turkey if you don't want shrimp. Thigh meat is overkill when it's not the main attraction.

    How would hoisin and sesame oil affect the healthier dish in a negative way?

      Imo I always use toasted sesame oil, it will add some calories, but you could probably replace some of the peanut oil with sesame. Hoisin probably could replace the sugar in the seasoning since it's pretty sweet.

      Sesame oil is also p high in unsaturated fats, aka healthy fats

      important to note that calling the lower calorie dish a "healthier" dish is very subjective. The much higher ratio of carbs in the lower cal version may not be healthier for a lot of people. Saying that though, I'm not a nutritionist, but my nutritionist would definitely advise me to eat the "unhealthier' version of the dish, as I'm at a calorie deficit as a runner.

      @@prmperop healthy or unhealthy doesn't have anything to do with macros. It's about what the macros are made of. Whole grain and sugar are both carbohydrates sources but their digestion times are much different.

    This is the coolest low calorie video of yours I've seen. Did not realize rice texture actually made a significant difference in terms of calories. This is the quality content I subscribe to your channel for.

As for other recipes, I feel like Stir Fry would be a good choice, but later on, seeing as how you just did Fried Rice. Keep it up bro!

    Amazing. I love watching all of your videos. You’ve inspired me to get out of my head and cook more and I’ll always be grateful for that.
    Fried rice is something I make a little too often, and it’s always been missing something. I’m going to try your restaurant style techniques and I can’t wait to taste! I tried to like the video on three separate occasions. It’s awesome!

    Love this! I'm American and I started cooking at 7 years old, with my first dish being (a terrible) fried rice. I learned by watching Wok with Yan back in the day (not his fault it was terrible, I was 7yo). Fast forward to now, I've been living in China for 3 years, and I've done SO many trials on fried rice for the same reasons. My go to is to do the low-cal/high water version, but the day before. I put it in the fridge uncovered overnight and get the best of both. I also add some salt and MSG to the rice water to not need as much later on due to the rice actually having flavor as well. Great channel, I'm a fan :)

    For me, if I'm cutting calories, not losing taste is the main thing to keep me making low cal food. Asian food, especially rice dishes helps with this so much, and MSG of course, which I have no problem using. . Great video. New to your channel and you have some great videos. Used your pesto recipe for a wedding buffet I was catering for and it was amazing. Tho hard work making a lot of pesto!!!

    small tip if you're following ethan's method for cooking the rice with more water. Cook the rice a day before, and leave it in the fridge in a not completely closed container. The next day, before cooking just make sure to use your hands and break the chunks but then it's perfect. In fact in traditional recipies in asia, you never use fresh rice for fried rice.

    I really dig how you breakdown the taste differences. A lot of videos will say how a lower calorie recipe "tastes just like the original", which I don't really agree with. It's gonna taste similar but not the same (not in a bad way, just different) and acknowledging that is super helpful for people just getting into healthy cooking.

    When I saw your post yesterday mentioning lower calorie fried rice I thought you were going to go with cauliflower, glad you didn’t! I used to make cauliflower fried rice but decided not to compromise, I’ll just eat something else unless I’m gonna have a high carb day!

    Swapping grated cauliflower for the rice is the real calorie saver.
