In Indian cooking, basmati rice is a long grain rice known for its delicate fragrance and this dish is probably the one I get asked about most. Now, one thing you need to understand is that Indians are terrible rice snobs. I did try to open up my mum's world once by cooking her a risotto and I have never been looked at with such dismay - it was like her brain could not compute that you can cook rice like this, or serve someone 'rice soup' as she called it. Oh well, I tried...
Right then, I always use basmati rice as it is the best and it always delivers. Put it like this, once you've made my rice you will never make it any other way again (or you'll have me to answer to!).
Ingredients
1 mug of washed basmati rice
2 mugs of cold water
Method
Wash the rice till the water runs clear - this is done by putting the rice in a pan stirring and draining, repeat and wash again until the water is clear. You will need to do this a few times. I always measure my rice in a mug (a standard mug will feed 3-4 people) and you will need twice the amount of water to rice to cook them perfectly.
Put your washed rice in a wide based pan and add twice the amount of cold water.
Begin to heat up the pan and bring it to a rolling boiling. Reduce the heat to the lowest setting possible and put the lid on the pan. Leave to cook for exactly 12 minutes. However tempted you maybe do not remove the lid.
After 12 minutes remove from the heat, take the lid off and leave for a few minutes.
All the water will have been absorbed and each grain will be separate - using a fork gently fluff up the rice don't just plunge straight in with a spoon

Thank you for this recipe! I used an inexpensive domestic basmati rice grown and packaged in Texas and I have an electric stove. I followed the recipe exactly, word for word. The result was a perfect separation of grains and amazing fluffiness; easily the best rice I've ever prepared. Imported Indian rice is very expensive in local grocery stores here in Nevada. I was worried about the quality of domestic rice and how it would turn out. I was more than pleasantly surprised, elated really. I can't thank you enough! I love your channel and will try many of your recipes in the months ahead.

Love this. So easy. Perfect rice. I added some spices of my liking to the water and the rice was PERFECT. Second time using your method. Each time it was great. Easier and less work than using my pressure cooker. Now I will make 8 cups using this method and freeze the finished product in serving-size plastic bags. For small amounts, I rinse the rice directly through a strainer. Thank you.
How long did you cook the rice for for 8 cups?
@@carolinesakinah1903 Bring to a boil. Once it's at a good boil turn heat to the lowest setting and simmer for....12 minutes. Check to see the water is absorbed (next to none on the bottom). If there is too much water on the bottom simmer for another couple of minutes and check again and again until there is next to no water on the bottom, better yet no water.
Remember, only add double the water, so 8 cups rice = 16 cups water. DON'T FORGET to rinse the rice before you put it in the pot. (The water that remains in the rice after draining is just enough to 'adjust' the water, so don't compensate, treat the rinsed rice as though it were dry.

Hi again. I made the rice as you do and it turned out perfectly. What can you put in there to give it more flavour. Do you put that in at the beginning or after. We are used to making our rice Nicaraguan style. Frying it in a spoonful of oil first when dry and when it starts to brown then we add the water and whatever spice we want to flavour it as desired. It takes more time for the water to be absorbed but it ends up perfect.
Sounds amazing - you can do it either way. Toast any other these - cumin, bay, cardamom, cloves in a little ghee or oil and then add the rice and cook or you can make it pain and add spices after. Here are a few links to some rice dishes - www.harighotra.co.uk/search?t%5B%5D=6151&q=rice

I can't believe I've been buying microwave rice all this time. I tried boiling rice once with no directions and it turned in to mush, I gave it up as a bad job and carried on buying the microwave stuff.. I tried this method last night and it turned out perfect, I will never buy microwave rice again! Uncle Ben's must be making an absolute fortune with the little amount of raw rice you need for a meal lol

Hi lovely to hear that you are enjoying the channel. With the salt thing - from a chefs perspective yes it does make the rice taste better and I would always season the rice at the restaurant. But at home if I am serving rice with curry I tend not to because there is so much flavour in the curry that it's not really needed. I guess I am saying that not for everyday but special dishes I do season the rice - I hope that helps. Great instructions, because I have an induction hob I can bring the water to the boil, cover the pan and turn the hob off, the residual heat cooks the rice to perfection. Thanks Hari for another great video
Hi Dizzy - my pleasure - there are so many different ways to cook rice. This is my preferred method at home but at the restaurant where I cook it in larger volumes plain rice is better being boiled in lots of salted water and then drained. Just did this recipe because I kept screwing it up in a rice cooker ironically and this turned out great but one thing I do ask is how to stop the crust at the bottom of the saucepan,I assume something I messed up but the rice is a great consistency thank you

Thanks so much for this video. My rice always turns out lumpy and heavy. The Basmati rice I get at our local natural foods store is also much darker in color than this is. And it takes longer than 12 minutes to cook and also seems to absorb less water. Any tips on cooking this sort of basmati rice. And also- if I wash it 4-5 times, am I washing away some of the vitamins and minerals found in the rice?
Hi I would go with the same process but you are going to have to experiment with the length of cooking time - Probably be about 15-20 minutes. Let me know how you get on. It's important to wash it, it may not need as much washing - just check how murky the water is. Hope that helps. Thanks Hari

Excellent video. My favourite way to cook basmati rice is using a little too much salted water, boil for exactly 11 minutes, drain excess water using the lid displaced a tiny bit, then replacing the lid and let stand for about 20 minutes covered, unheated. It absorbs the remaining moisture, fluffs up well and, that way, never sticks to the pot. It is plenty hot even after standing for a while. No other rice is as good as basmati.

Hi I always cook basmati rice for 15 minutes covered with minimum heat and 3 minutes with no heat. I have to try your recipe. Does 12 minutes work with all basmati rice? With my experience not all rice cooks the same. I dont get why you have only 17k subscribers. you are a natural, I love your channel :)

Thank you for this! I used Brown Basmati, and added a bit of turmeric. And your method. Perfect rice. No more microwave rice (mostly because my microwave is broken). Also…. I think I need a smaller cup, made a bit too much for one person.

Thanks for this. I used to cook only Brown Rice, but switched back to white and was buying those microwaveable packets and ended up paying a fortune and then wasting half of it! 😉
I'd never really cooked white rice and the first few attempts involved the pan constantly boiling over when the lid was placed on.
I then thought I'd try one of those "foolproof" microwave Rice Cookers and put one on my Xmas list last year. Every time I tried it, it ended up with the rice being quite hard.
So, this has been a godsend.

What’s the original heat we should put it on for it to boil mid or high or in between because every time I can’t just leave it as she says because if I leave it closed bubbles just go to the top and overflow so I have to take the lid of for a sec and close it again so that the bubbles go back down, not sure if all that is the reason I always have last layer stuck to the pot every time or if that’s just normal lol

Yes you can - yes it is just make sure you use a wide pan and the right quantity of water. Or if it’s a huge amount you can do it in 2 batches

This is the best video I've seen so far.
I followed the exact steps you did until I left it with the lid on for the 12 minutes and the thing was that it kept foaming like crazy so I kept opening the lid so the foam to be lowered.. why this happened?
Did you turn it right down to the lowest setting on the smallest hob?
@@HariGhotra yes I did, and maybe indeed that was the problem cuz I work on an electric kitchen and it's really powerful so I'm still figuring out it's pace.. anyways, I forgot to mention that the result was fine!! Thank you for this wonderful video!
@@JohnIv01 I think electric can be more powerful ideally it needs to go down to a very low simmer. For you if you can’t do this I suggest leaving it on high without the lid until liquid evaporates. Turn it off put the lid on and leave to steam for 5 minutes

I just cannot stop it being sticky even when i rinse it under running water with a sieve. Made a big batch the other day, yet again sticky rice.
I bought a 10lb bag of shrilalmahal basmati rice and I swear I have wasted half of it trying to cook it correctly. Finally my agony is over. Strangely enough it says on the bag 4 cups water to 1 cup rice and boil for 12 minutes then simmer. This is where I went wrong from the jump . Thx so much.
