  • Salmon en Croute: Puff Pastry Salmon with Spinach and Feta
    Ingredients:
    salmon - 2 pieces
    lemon - 1
    garlic - 1 clove
    fresh spinach - 142 g
    feta (crumbled) - 170 g
    puff pastry - 2 sheets (490 g)
    vegetable oil - 2 tbsp
    egg yolks - 2
    salt
    black pepper
    thyme
    oregano
    parsley
    sesame seed mix (optional)
    Steps:
    1. Pour boiling hot water over salmon to remove skin.
    2. Soak skinless salmon in a marinade: juice of one lemon, parsley (dried parsley is used in this video), salt and pepper.
    3. Chop garlic and spinach.
    4. Add 2 tablespoons of vegetable oil to the frying pan.
    5. Fry chopped garlic and spinach for 3 minutes (medium heat).
    6. Season it with salt, black pepper, thyme, and oregano (to taste).
    7. Let it cool for 10 minutes.
    8. Take a sheet of puff pastry and apply egg mixture (2 egg yolks).
    9. Spread feta evenly over the pastry.
    10. Add spinach and salmon.
    11. Cover it with another sheet of puff pastry.
    12. Seal it with a fork.
    13. Apply egg mixture. Cut slits. Decorate with the sesame seed mix (optional).
    14. Preheat the oven to 350°F (180°C). Cook for 30 minutes. Final 5 minutes keep a close eye to prevent overbaking.
