Ingredients:
4 dried guajillo chiles
2 dried Ancho Chiles
2 dried Pasilla chiles
2 dried Arbo chiles
1 package of Oaxaca cheese, Mozerella if you can't find it.
2 cups boiling beef broth
3ish pounds short rib (remove bones if not boneless)
1 yellow onion
7 cloves garlic, smashed
3 tablespoons apple cider vinegar
1 tablespoon Mexican oregano
1 teaspoon cumin
2 teaspoons cilantro
2 chipotle chiles in adobo sauce
Salt & pepper
15 oz. can diced tomatoes

I have 3 sons like kim. Every time I see buddy or levi I think about how lucky she/we are to be boy moms. The tacos look amazing. Its similar to a dish it makes in my crock pot. Shredded beef tacos.

Why not cook the short ribs with the bone in. More flavor. Put your onions in the freezer for 20 minutes before chopping. No tears. Grate your cheese directly in the black base. Not the lid 1st. I use this exact container for all my graded cheese. Yum Buddy! 😋

I love birria tacos🌮 Yours look delicious! I've never attempted to make them myself. We have a great little hole in the wall mexican restaurant in my town that makes awesome birra. Yum! Now I'm hungry! Great tip with the chewing bubble gum while chopping onions, I'll have to try that!

Good tip for cutting onions, get them real cold and when you get ready to do the onion stand next to the sink with the cold water running while you do the onion. Then wash your hands in cold water and rub the sink with your hands to get the smell off of them. That is if you have a stainless sink, if not wash them with mustard. It works

I like mild as well. I don't like anything burning coming or going! Lol!
They are mild. My mom thought they were a little spicy, but you could leave the Arbo chilies out all together if you wanted no heat.

Those tacos look amazing. I wish I could taste one. I have never had this type before. The last time I priced short ribs was about 4 years ago. For a very small package was so high priced I refused to buy them. I never went back to short ribs. Thanks for doing a great job and no mess.

I keep my onions in my fridge and they don’t make me cry.
When you shred your cheese put the grater in the bowl and grate it. No mess and saves you a step
Before dipping the tortilla in the consommé, squirt some oil on your grill and fry the tortilla a couple minutes on each side, then dip. It will help to hold it together. You did an awesome job!

By the way, another very helpful hint with cooking onions I literally just learned, is set a bowl of water next to your cutting board...those fumes are attracted to moisture, thus your eyes. I was shocked to learn it really works too...just in case ya doing happen to have gum lol Loved Stephanie's face...y'all are so sweet together!

This looks awesome! Tip on the chiles: slice down one side or in half lengthwise and use the back of your knife to skim down the inside of the pepper to remove the seeds.
