The starches from the noodles is what helped make it stick so bad. Cook the noodles as you did but cook it ahead so the pot can sit and give the noodles time to absorb the flavor of the dish. This dish will be better the next day. Let us know if is was.
Thank you, Dan and Lu. As the other 8 episodes, this was a great video as well. I love the fact that you did the recipe two ways. The one thing I would add, with my experience in cooking, is that the one with the raw noodles, you have to be careful to add more liquid if needed and I would've had a chicken broth you buy in the store. This way, you would've had similar results with a pot less to wash

We’re from Louisiana and my husband cooks Pastalaya a good bit. You cook the noodles in the sauce to flavor the noodles and it also absorbs the liquid. If you don’t the sauce will be to runny. You will have to cook the sauce uncovered to cook out the liquid to get your desired thickness.
I have never cooked my noodles with the sauce, and my sauce isn't thin. I cook the sauce all day, uncovered and with a very, very low flame. I stir the sauce couple of times every hour.
Y’all crack me up! So note to adding noodles directly to the sauce - as they cook they leach starch into the dish to help thicken, AND they soak up the flavor of the sauce they’re cooking in. Love y’all and keep them coming!! ❤️🥰🤗

The biscuits looked great. Cooking them in the refurbished cast iron skillet helped to elevate the baking of them. I couldn't have eaten the Cajun Pasta because that jalapeno sausage would have been too spicy and ruined it for me. I love Cajun food without a lot of heat and I will try making the dish with a sausage that isn't spicy. It did look delicious.

I made this for our family last night and my husband LOVES it so much. He has been raving about the flavor and especially likes the pasta consistency. (I put rotini noodles in uncooked and after 12 minutes covered, they were done but still kept their shape.) He had three helpings last and just came in all excited for leftovers for lunch today. He just yelled "Hot damn...that's good!" from the kitchen LOL
Just a FYI, when grocery shopping, always take from the back. They put the older stuff at the front. I worked at a major grocery store, that’s how I learned
Hi Dan and Lou, great dinner again. If you wanted to cut the heat a bit, add a can of drained corn. It also adds a little sweetness that compliments the Cajun flavor and adds a little more texture.
Haha the crazies hang out at Walmart at night. My daughters and I just use to go to Walmart at night to check them out!!😂 Will be making this recipe. Husband loves spicy.

Dan, why do you not listen to the woman in your life about how spicy things hurt their system? You could add spice to your dish independently after it's cooked. Instead, you're making it all about you, and "they should just learn to like it!" Oh, there would have been a battle at the meat dept! She said no and you still went on and put them in the cart anyways. At least compromise and go half and half sausage spices.

Green peppers and onions cooked with the sausage together,are always great with smoked sausage, no matter the meal. Just to let you know y’all divided that after you both got tomatoes, so Lu got most of the tomatoes. From a southern girl and her hubby, who’s won tons of food competitions. Oh gosh Dan I about had heart failure when y’all put olive oil in the pasta water. It’s an old idea that doesn’t work. Oil and water don’t mix, so when poured into the pot the oil will pool on top of the water. When you drain the pasta, it coats it so now the sauce won’t stick. Best way to boil pasta, large enough pot for plenty of room for movement prevents sticking. The salt should go into your water to help bring it to a boil and flavor the water. Hope this helps y’all in future cooking! ❤
Hi Dan and Lou, I searched high and low for the green enchilada sauce from last week. Its so hard to find in the UK. I persevered and got some online from an American grocer website. Well worth the effort, they were delicious. Love cooking with Dan and Lou, your chemistry is hilarious! Lou, you always put Dan back in his place. Keep em coming.
Louisiana Cajun girl here. We make Pastalaya all the time. The pasta can be cook or not cook either way is awesome. Try adding chicken or boneless pork meat bites also to it, browning with sausage. Different pasta also. Penni holds more sauce but fettuccine also can be used. We love a good Pastalaya at our house. Also it’s served at weddings in South Louisiana.

I probably would have preferred just regular smoked sausage, but I know how much you love jalapeños, Dan. Those biscuits looked fantastic, but I think you got the bacon grease idea from one of your dad’s videos. Glad you used the cast iron skillet your dad worked so hard on for you too. Norma here. Everything looked delicious, but I’m with Kim and your mom, I think it would be too spicy for me. I probably would have preferred just regular smoked sausage, but I know how much you love jalapeños, Dan.
Those biscuits looked fantastic, but I think you got the bacon grease idea from one of your dad’s videos. Glad you used the cast iron skillet your dad worked so hard on for you too.
BTW, I come from a big family so I’m used to the loudness plus all the Sunday dinner videos have ten different conversations going at once too. Love it.
