The audience were at an award ceremony the prizewinners just received their awards and gave a speech but Rosalia just wanted to sing...you can see that it was almost improvised...the stage wasn't set up for this but as you see Rosalia and her backing group of Gypsies just knock it together its just good fun. She probably turned a very boring event into a party for the majority of the American audience who were in bow-tie and evening dress mode.

This is from the flamenco tradition. The clapping is a key element in flamenco. Its roots feature the voice, the clapping (which is an instrument), and maybe some small percussion box and the background vocals or call and response vocals. And the dancing is also key. And flamenco and related Spanish vocal traditions, the singing is supposed to.convey emotion and in some songs with the vibrato and other vocal techniques is supposed to sound almost like the singer is crying. Look ot up, but the flamenco in Spain comes from the Roma populations, people who were pejoratively were called gypsies.
