Day 17 of 100: USE UP END-OF-SEASON TOMATOES! Make Roasted Tomato Basil Soup :D

Recipe for Tomato Basil Soup:
Garden tomatoes, any, halved
Sweet onion, large chunks
4 cloves garlic, whole peeled
Place on sheet pan, season with salt and pepper, and roast 400* for 40 minutes. Blend with large handful of basil. Freeze for later or add milk to complete.
Great way to use up extra tomatoes and have ready meals in the freezer...just add grilled cheese or some other bread!
