Hi Yolanda, well, you've done it again! Being full Irishwoman, I appreciate all things Irish and I love, Love, LOVE THIS CAKE! The next best thing would be is to be able to move back to Ireland and make it there and hand out slices to me customers from me own (still dreaming about it)

Since I mainly want to work with small cakes, I had a thought of making this cake like you did except make the cakes in Jelly roll pans so they are thin and would cook fast. After the cakes cool, I would use a 2 1/2" round cookie/Biscuit cutter and cut out the necessary number needed..
I would then take a 2" biscuit cutter and do the same cutting 2 for each biscuit. Then I I would carve the cake into the shapes needed, put on a CRUMB COAT AND CHILL!!! After chilling for a while, I will Ice the small bottom cake with your recipe for Irish cream frosting then proceed as you did but with the small layers of cake. Then frost the whole cake, smooth it out and roll out discs of Black Fondant. I don't know why I am telling you what I would do except for the size change and put in a Cupcake wrapper since this is what you already did, duh! Sorry, Brain fart. Oops, another thot just hit, don't put them in the Cupcake wrapper but put them on a slightly bigger piece of cake and have the Rainbow coming out of it like your other cake has. Let me know what you think if you get the chance and thanks for all the work (fun) you do for our sake. Hey Yolanda, i'm a aspiring teen baker who wants to be exactly like you. i was inspired by your Mardi Gras cakes and just had this wonderful idea for a naked spring checkerboard cake. its just 3 cute pastels (pink, blue, green, and/or purple) with a simple white buttercream, of your choice, and some matching edible flowers. i thought it would be a super easy cake that many of your subscribers could make. i plan on making this cake with my friends but it honestly wouldn't be pretty, or as nice as yours (if you do choose to make it), it could also be like a unicorn themed cake with like sprinkles and rainbows. you probably wont read this but hey its worth a shot. Also, i LOVE your TOPSY TURVY CHRISTMAS CAKE!, it fills me with joy!

It keeps the cake moist & delicious throughout the decorating process! 😋🍰 Some of my cakes can take DAYS to put together, and taking them in and out of the fridge tends to dry it out if you haven't moistened the cake layers prior to stacking and building the cake. 😅 That way, when it's all finished, the cake still tastes as DELICIOUS as it did when it first came out of the oven! 🎂👏😉
