in your example of the sun going around 360 degrees, due to the brightness of the sun and presence of the atmosphere, you can't conclude that the sun is changing apparent size in a fuzzy video. you need a solar filter to actually see the true shape/size of the sun. when viewed with a solar filter, the sun never changes apparent size.
Your description of parallax was a description of perspective. parallax is not things appearing to move closer to each other as you get far away.
parallax explains how closer objects appear to move more, in relation to the background, as the observer moves side to side.
And who told you that parallax has never been measured or recorded in the stars? This is not true. you can go to astronomical databases and look at all of the stars who's distances have roughly been determined due to parallax. the majority of visible stars are very far away, and only the stars that are less than 100 parsecs from us appear to move much due to parallax, so expecting the whole night sky to change, and constellations to be wildly altered, after moving 2 AU is just a weak understanding of the distances involved. check for yourself if you have the patience. see which stars are closest, find one in the sky and take a picture. wait 6 months and take that picture again. keep the same manual settings on your camera for both pictures, and then measure the distance between the star you are tracking and the stars around it.
