When covid hit and school went online, our Anatomy professor had us take our assigned organs home to perform the dissections, so I've actually done at-home dissections. Also, from my experience, it's not the organs themselves that stink so bad, but the added preserving agents. That stuff can clear a room quick.

As a medical student (who had to cut open a human cadaver heart), you are lucky that you did not opened the bag of heart otherwise, you would have gotten a hit of formalin which is used to preserve the heart and let me tell you it feels like a punch to the nose and the area between the nose and mouth and an added effect of chilli spray in your eyes, nose, mouth and throat.
