  • Street style Idli and Murugan Chutney (chutney without coconut)
    In every lane in Mumbai, there is an Anna who comes in the morning and brings idli and Chutney. This Chutney is made without coconut and the idli is super soft. I am showing you this recipe of Idli through natural fermentation. You have to plan 24 hours in advance if you want to eat this, Idli . The Chutney is very easy and is made from basic ingredients, and you don’t need sambhar or any other condiments.
    .
    Ingredients :
    For Idli:-
    1 cup Split and Skinless Lentils (Urad Dal)
    3 cup Rice
    1/2 cup Poha (Flattened Rice)
    2 tsp Fenugreek Seeds (Methi)
    Salt as per taste
    For Chutney:-
    1/2 tsp Oil
    2 Garlic Cloves
    3 Green Chillies
    2 chopped Onion
    1 small piece of Tamarind
    2 tbs mildly roasted Peanuts
    2 tbs Daliya
    Coriander
    Few Curry Leaves
    Salt as per taste
    1/4 cup Water + more 1/2 cup Water
    For Tadka:-
    2 tsp Oil
    1 tsp Urad Dal
    1 tsp Rai
    2 Dried Red Chillies
    Few Curry Leaves
    Method :
    Thoroughly wash all ingredients (Rice, Urad Dal, Poha & Methi)
    Soak everything for 5-6 hours in water
    Further take a mixer jar, add soaked ingredients
    Add some water and grind to a smooth batter
    (Grind the mixture in batches)
    Transfer the batter in big vessel and mix it with hands
    Cover and leave the batter overnight to ferment
    Add Salt and mix it
    Steam the idli steamer well
    Grease idli mould and pour the batter
    Put the moulds back in the steamer
    Cover and steam for 15-20 min
    To Make Chutney:-
    Heat 1/2 tsp Oil in a pan
    Add 2 Garlic Cloves
    Add 3 Green Chillies
    Add 2 chopped Onion and fry them partially
    Add a small piece of Tamarind
    Add 2 tbs mildly roasted Peanuts
    Add 2 tbs Daliya
    Mix it well, turn off the heat and let it cool down
    Transfer this mixture in a mixer jar
    Add Coriander and few Curry Leaves
    Add Salt as per taste
    Add approx 1/4 cup Water
    Churn to a smooth texture
    (Add more 1/2 cup water if once churned)
    Further for tadka heat 2 tsp Oil in a pan
    Add 1 tsp Urad Dal
    Add 1 tsp Rai
    Add 2 Dried Red Chillies
    Add few Curry Leaves
    Pour the chutney in pan
    Mix it and turn off the heat
    Take out idli from the mould
    Take it on a serving plate
    Pour chutney on it
    Enjoy Super Soft Idli and Delicious Murugan Chutney

    Annas are born specialists in South Indian preparations.
    I see in Bangalore and Chennai that people reach office 15 - 20 mins in advance finish their light idli, vada bfast with Anna near by office and start their work

    I am from kerala but born n brought up in Mumbai... I noticed your idlis were not risen... it happened to me.. that's due to poha... I also was using.. my mom in kerala never uses poha... and it's soft and fluffy...also

    First time on your channel. Came thru you tube algorithm.
    South Indian food is popular all over the world. Especially idli, chutney, vada sambar and Dosa with potato stuffing.
    You must have heard about Dosa man who is so popular in New York. People have to stand in lines to get his dosas especially during lunch time.
    My question was don’t they say to soak urad daal and rice in separate bowls and grind them separately too for getting a good texture ?

      Actually dosa man is on you tube also. He doesn’t have his own channel but he has been interviewed many times and how his day goes. Vegan Americans love his food. He gets up daily at 3.00 am.
      We love idlis. Wish had some anna or amma selling those early in the morning here in Texas lol. All we can get that early is donuts and coffee and for that too we have to drive to the donut shop to get it lol.

      In this recipe onion is the base.. so if u want to avoid it then make regular coconut chutney. Have given the link in description
