Didn't notice that all the measurement comes after the tomatoes. It was OK, but had a little too much cilantro because it was a large bunch. Second, several years ago after chopping a jalapeño I managed to get some juice in my eye. I'll never do that again, so wore gloves. However, managed to slice the tip end off one which ended up in the salza. OK though because I ended up getting that bite myself. Chopping note for very amateur idiot cooks like myself. I would say that each portion of the onions, jalapeño, etc should be about square which means that it needs to be sliced about the size it is thick. Tomatoes-I thought I was paying attention, but Chris's technique of laying the tomato slices side by side, then cutting lengthwise, then cutting the whole palet, works. Tomorrow I'm going to Cabela's and get one of those good portable knife sharpeners. I'm sick of dull knives. Thanks so much Chris!

Not sure about your local chipotle, but chipotle as a brand uses the stems of the cilantro as well when making sauces/guac because it gives it more flavor.

We prep 8# 1/3 4” deep Cambro hotel containers Daily.😳 That’s a lot of Pico. That’s how much we use all of it. I partly don’t get to a full 8 containers worth simply because the amount of tomatoes to dice and prepare is far too much which takes away from doing the rest of the list of things to get done in a 6 - 8 hour given time shift. A big time consuming process. I have Avocado 🥑 to cut and smash for guacamole - picking 8 ripe avocados can also be time consuming since we don’t know which is ripe to cut open and mush. Make a container of Crema - ( sour cream and 3 limes ) 1# 1/3 6” deep Cambro hotel container, sliced tomatoes for burgers 12 rows of 3 stack slices of tomatoes in 1# 1/2 2 1/2” deep Cambro hotel containers, tomatoes sliced and halves for other entrees in 1/3 4” deep Cambro hotel containers, mixed greens for salads in 4” deep half size Cambro hotel containers.

Thanks! But there’s nothing illegal here. I simply go to the website, look at the ingredients, and experiment until I get it as close as possible. All I am showing you is nothing you cannot observe your self from public knowledge. Oh and my recipe is not 100% chipotles. It’s so similar it’s hard to tell much of a difference though.

That one is so simple! Just slice bell peppers and onions, grill them, add oregano and kosher salt to season at the end! 👍🏻
