- American Chef visits a new market in Saigon, Vietnam to search for what to cook for dinner. It is impossible to not be inspired when shopping at the local market. There are so many awesome new ingredients and some things that are just so darn fresh they easily stand out. It may seem unlikely but the onions at this market where so darn fresh for me it was the highlight of the whole market. They were so fresh they were so juicy and milky.

I think I would use rice paper to make the wrap to hold everything inside. Maybe you can add some thinnly sliced carrot sticks, avocados and sautéed onions (with some balsamic vinegar, salt, and sugar) to the rolls. 😊
The vegetables in Vietnam is so cheap so fresh, so much fresh fish, in the UK supermarkets fish like week old on the fish counter in the day they bring them on display on ice the end of the day they store them in the cooler and next morning the same the fresh taste less , you make me want to run back home so so much , You have beautiful family Chad , your wife very beautiful.

Ps: Nice job getting the kid involve in making the food, it's good to have them interested in cooking early so they can cook for themselves later on in life.

Yummmmm…we used to eat Banh hoi with roast pork too in our family growing up!! But never wrapped it myself…can’t remember if my parents/grandparents did that with theirs.🧐 that looks great that way too! My mom hated fish sauce so she always had us using maggi. But when my sister and I discovered fish sauce around high school/college, we were in love.😅

Love this! Tip for those in the states that has to deal with dried Banh Hoi sheets/pieces...to eat get them ready quickly: Soak the sheets/pieces in shallow water just covering and leave until they are about 80% absorbed (few mins) squeeze dried and then placed them on a plate (slightly spaced) and microwaved 30 secs to 1 min then voila!

When you buy leafy vegetables looks for one with holes in them, those are the ones that's organic, if they spray pesticide insects can't eat it.
I see beef tongue. You could do two dishes. Vietnamese asparagus and crab soup. Grilled beef/ox tongue and banh hoi wrap.
It looks great & very creative. I will try cooking one day.

I have a suggestion! If you could consider exploring more miền trung (middle Vietnam) food as well. As a Đà Nẵng person living in HCM city, I find that food in my hometown have totally different palette and flavors. I think it would make a great video idea for you. Anyway, cheers!

Also Did you know about the trick to speed up the process of straining a sauce through a chinois or mesh?? Run the hand blender and the liquid falls faster threw the bottom!! Wish I had learned it before I had quit the cook circuit.

a little missed opportunity there. Tomato goes extremely well with fish sauce. Otherwise, great stuff.
Have you ever tried jeow? Specifically jeow mak len, which is a Laotian roasted salsa? It's delish!! I grew up eating it with sticky rice and grilled beef. Just a thought when I saw you making your salsa.

It’s so sad my people can’t improve their slum wet market to a clean market.
This same dirty market has been going from one generation to the next without improvement. So sad.
People now prefer to shop in supermarkets rather than local markets, it's cleaner and safer foods. The market now is mainly serving low income workers, therefore, less money is invested to upgrade it.

They don’t need to upgrade anything, they just need to keep it clean, organized, and stop throwing garbage everywhere.
This same slum mentality passed down from one generation to the next and they operate the same filthy market for hundreds of years.
It's so sad you spend your days and hours going from one Vietnamese video to another leaving negative and toxic comments. Do something to better the environment yourself or give good constructive advice or something vs being a dick all the time.
I hope they can upgrade to get better drains, flooring and air conditioning. They are humble hardworking people.
