Mix well…to test if your syrup is crispy, take some cold water, drop a few drops of syrup into the water - you will know its done when the mixture hardens in the water and it will become crunchy (7:43 sound of crispness) if its not crispy keep cooking for few mins and test again in cold water. Once crunchy, add the roasted sesame seeds, coarse peanuts and mix well. Make sure the heat is low, don’t switch off stove as it will become hard to mix. Add the phool makhana and mix well until the syrup nicely coats the makhana. In a open pan, grease the dish with oil and spread the phool makhana on the dish. Spread the phool makhana so that it cools, don’t let it completely cool, cool it enough for you to touch and quickly seperate these, once seperated let them cool until nice and crunchy. Can be stored for 3-4 months in an airtight container

People from USA this is similar to CrackerJack. Since Lotus isn't easy to come by, just use popcorn, make a brown sugar based toffee. There are a million recipes for caramel corn. You can add nuts, shredded coconut, flavoring- whatever. Experiment! [hint: the caramel corn that comes out light, like hers, has a touch of baking soda added- so look for that version of carmel, toffee...etc corn.
I make it with almonds!! It's very popular in Germany. You need 1kg of sugar and 300-500 grams of almonds. You have to heat the sugar in a pan until it becomes liquid, then add the almonds and stir it constantly until it caramelizes properly!! one pinch of baking soda make sure it is thick and it should not be sticky you can check it by putting few drops in cold water make sure when you add few drops in water it should become like a crispy chip check it again with the same method make sure when you checking it by putting in cold water it should be hard and non sticky after that add white seeds and peanuts which you have roasted do not close the stove put it on a light heat stove if you will it will be like a hard as rock it would be hard for you to make things in it after that add that thing whatever it is called take a plate Greece It and separate everything each ball when it is hot after that let them cool aside finally they are ready to eat😂 please likes please 😅❤❤

Roast Fox nuts/ lotus seeds, sesame seeds and peanuts
Caramelize jaggery using very little water in low heat, spice it up with dry ginger, cardamom and pepper. Add a teaspoon of ghee or oil for glaze. Add little baking soda.
To check if jaggery caramel is ready, drop a little into cold water, if it solidifies it’s ready.
Then mix in the roasted ingredients in lowest heat.
Transfer to an open wide plate and break them apart into single pieces while they are still bearably hot.
Cool them by simply letting them sit on the counter, serve.
You can store any extra into an airtight container and shelf it for later.

For the people who need the recipe in English
INGREDIENTS
800g Puffed lotus seeds
1/2 cup raw peanuts skinless
1/2 cup sesame seeds
280g jaggery( it have very caramel flavour so I would not recommend using sugar unless you can't find jaggery anywhere )
1 tsp cardimum powder
1/2 tsp black pepper powder
1/2 tsp ginger powder
1 tsp ghee (purified butter), normal butter is perfectly fine too
1 pinch baking soda
INSTRUCTIONS
1. Dry roast the lottus seeds to remove moisture so their crispy and have a nice light golden colour
2. Take the same pan add the peanuts and dry roast them till light golden and similarly roast the sesame seeds till lightly golden, then crush the peanuts till they look finely chopped (not powder preferably) so their the same size as the sesame seeds and put them aside
3. Now in the same pan add the jaggery in small pieces so it melts quicker and more evenly. Melt on low flame and add about 4 tbsp water to help with the melting. Keep cooking on low flame mixing constantly so it doesn't burn
4. Once completely melted add the cardimum powder, black pepper, ginger powder, and ghee and mix well. Then add the pinch of baking soda and mix well
5. Cook it to the right consistency till it hardens when cooled. [Tip]: put a drop of the melted jaggery in cold water if it hardens like candy its perfect if its still sticky cook just a little longer till prefect

The recipe uses fox nuts
1. Roast fox nuts until crunchy
2. Roast 0.5 cup peanuts until golden, grind them coarsely
3. Roast 0.5 cup white sesame until lightly golden
4. 280g jaggery - break it up into smaller pieces, add 3-4 tablespoons water and cook very lightly until fully caramelized.
5. Add spices 0.5 tsp cardamom, black pepper, ginger powder each, 1 tsp ghee/cooking oil/butter, 1 pinch baking soda
6. Cook until water test is successful. A drop of caramel in cold water should turn crunchy immediately, not sticky.
7. Assembly - On minimal heat, add peanuts and sesame from before and mix. Add fox nuts. Mix until coated.
8. Grease a tray and lay the mix out and spread to cool slightly.
9. While still warm, separate them. Once they cool, they break easily so do it as soon as possible.
10. Store in an airtight container some place dry.
Caramel ~popcorn~ fox nuts are ready.

People from USA this is similar to CrackerJack. Since Lotus isn't easy to come by, just use popcorn, make a brown sugar based toffee. There are a million recipes for caramel corn. You can add nuts, shredded coconut, flavoring- whatever. Experiment! [hint: the caramel corn that comes out light, like hers, has a touch of baking soda added- so look for that version of carmel, toffee...etc corn.

You have to heat the sugar in a pan until it becomes liquid, then add the almonds and stir it constantly until it caramelizes properly!!
