    For English speakers:
    Part 1: Take 800 grams Fox nuts. Dry roast in a pan for about 1-2 minutes. Switch off the heat and let them cool off.
    Part 2: Dry roast few peanuts as well in the same pan, until they have golden hues. Grind them coarsely.
    Take 1/2 cup of White Sesame seeds. Dry roast them for 1 minute on a very low flame, keep stirring. Let everything cool off.
    Part 3: Use 280 grams of jaggery. Break it into small pieces, mix 3-4 tablespoon water to make a thick paste. Keep stirring constantly; without any pause. Add 1 teaspoon cardamom, 1/2 teaspoon black pepper powder, 1/2 teaspoon dry ginger powder, 1 teaspoon clarified butter/oil/butter, 1 pinch cooking soda.
    7:04 check the consistency like this. It should become crunchy when you drop a small amount in water.
    Mix the earlier roasted sesame seeds and peanuts, again keep stirring constantly, on low heat. Use an open container to flatten it. Cool off a little and seperate the individual pieces asap. Let them cool down completely. This will taste like caramel popcorn and will be beneficial for a number of health purposes.

    Translation: Today we are making phool makhana aka fox nuts or lotus seeds. High in vitamins, good for your muscles and teeth. You can call this crunchy toffee. 800g phool makhana, put this in a pan and dry roast on medium to low heat(these are soft in nature), until moisture is released. It will take 1-2 mins for these to be crispy and the colour should light golden in colour. You will know these are roasted when they break in the palm of your hands (2:44)
    Switch off your stove and let this cool in a seperate dish (do not cover).
    Whilst they are cooling, roast raw peanuts on low heat until the colour changes. Remove from pan and let it cool. Crush the peanuts in a motor pedestal. Should be coarse, dont make this into powder. Now roast 1/2cup white sesame seeds until the colour changes, about 1-2 mins. Dont let the seeds burn, should only be golden in colour. Let these seeds cool, meanwhile take 280g jaggery and add 3-4tblsp water so it melts easily. Do this on low heat, dont let this burn else your syrup will taste bitter. Add 1tsp cardamom powder, 1/2tsp ground black pepper, 1/2tsp ginger powder. Mix well and add 1tsp ghee to this liquid mixture and add pinch of baking soda. Mix well…to test if your syrup is crispy, take some cold water, drop a few drops of syrup into the water - you will know its done when the mixture hardens in the water and it will become crunchy (7:43 sound of crispness) if its not crispy keep cooking for few mins and test again in cold water. Once crunchy, add the roasted sesame seeds, coarse peanuts and mix well. Make sure the heat is low, don’t switch off stove as it will become hard to mix. Add the phool makhana and mix well until the syrup nicely coats the makhana. In a open pan, grease the dish with oil and spread the phool makhana on the dish. Spread the phool makhana so that it cools, don’t let it completely cool, cool it enough for you to touch and quickly seperate these, once seperated let them cool until nice and crunchy. Can be stored for 3-4 months in an airtight container

    Anyone who is asking for recipe in english :
    First of all dry roast the 800g of fox nut until crispy and light golden then in the same pan dry roast half cup peanuts then grind peants in chunks and then dry roast sesame seeds on light flame for 1 min then take 280g of jaggery ( small pieces ) in the pan add 4 tbsp of water until it melts on light flame after melting add 1 tsp of cardamom powder , 1/2 tsp Black pepper and 1/2 ginger powder mix thoroughly then add 1 tbsp of desi ghee / butter / oil and then add 1 pinch of baking soda and then cook the mixture until it thickens. Then add the roasted Sesame seeds, peanuts and fox nuts until evenly spreads all over the fox nut...After cooling down little bit separate them from one another...Cool down more and then enjoy.

      Fox nuts are prickly Lotus seeds. This is a type of water lily.
      The seeds are popped like popcorn.
      Jaggery is a unrefined cane sugar product similar to making caramel by cooking down sugar water.

    for all foreigners, who were unable to understand the ingredients, here you go:
    roast 200gm fox nut(popped water lily seeds),1/2 cup peanuts 🥜, 1/2 cup sesame seeds,
    grind peanuts
    caramelized 280gm jaggery, (it's not an alternative of brown sugar, it's made by boiling sugar cane juice till the constancy is achieved)
    add 1tsp clarified butter or butter, 1 tsp cardamom, 1/2tsp black pepper and 1/2tsp ginger powder, a pinch of baking powder
    add all together while the flame turns on on a very low flame, after a few minutes separate them.

    For those who are not able to understand the language.
    The ingredients -
    Lotus seeds/ fox nuts- 800 gms
    Jaggery- 280 gms
    Butter/ ghee- 1 tea spoon
    Dry ginger powder - half teaspoon
    Peanuts- half cup
    cardomom powder 1 tea spoon
    black pepper powder -half teaspoon tea spoon
    Seasme seeds- half cup
    Baking soda - 1 pinch
    Recipe - Roast the lotus seeds until they turn golden brown and let them cool down. Then roast the peanuts and crush them( don't make powder).Also raost the sesame seeds by continuously stirring and let them cool down. ( Roast them for 2 mins)
    Then take jaggery and melt it with the help of water( 3-4 tablespoons ). Keep the flame low and keep stirring.
    After sometime check the consistency of the jaggery by adding few drops in cold water. If it becomes little hard and crispy then its ready.
    Add all the dry ingredients and 1 teaspoon of ghee/ butter. Add a pinch of baking soda to add crisp.
    Mix everything together and then add the roasted lotus seeds. Again mix everything, keep the flame low.
    Once everything is mixed, take a plate and spread a little oil or butter and transfer all the mixture on the plate. While it is warm try to seperate the seeds. Because once they are cold it won't be easy to separate them. Let the seeds cool down and enjoy 😊.

    Stir fry Makhana (lotus seed)till crispy and keep aside
    Stir fry peanut and just crush it.
    Then stir white sesame seed for 1- 1.5 mts to turn golden and keep aside
    Then take a pan and melt 280g fine jaggery , after completely melting add a pinch of cinnamon power , jaggery and a sort of chilly powder she is saying Or you can add spices of ur choice , and also 1 teaspoon of Ghee , you can also add butter . The. She adds a pinch of baking powder to make the mixture a bit crispy finally. Then she tests the mixture by dropping it into. Water , whether it becomes solid , and also she says that it should be more boiled till it becomes crispy . Then finally add the sesame seed , peanut crush and mix and at last mix the stir fried makhana to it and take an open utensil spread butter or oil change the dish to it .

    For the peaple who need the recipe in English 🫶🏼:
    INGREDIENTS
    800g Puffed lotus seeds
    1/2 cup raw peanuts skinless
    1/2 cup sesame seeds
    280g jaggery
    1 tsp cardimum powder
    1/2 tsp black pepper powder
    1/2 tsp ginger powder
    1 tsp ghee(purified butter), normal butter is perfectly fine too
    1 pinch baking soda
    INSTRUCTIONS
    1. Dry roast the lottus seeds to remove moisture so their crispy and have a nice light golden colour
    2. Take the same pan add the peanuts and dry roast them till light golden and similarly roast the sesame seeds till lightly golden, then crush the peanuts till they look finely chopped (not powder preferably) so their the same size as the sesame seeds and put them aside
    3. Now in the same pan add the jaggery in small pieces so it melts quicker and more evenly. Melt on low flame and add about 4 tbsp water to help with the melting. Keep cooking on low flame mixing constantly so it doesn't burn
    4. Once completely melted add the cardimum powder, black pepper, ginger powder, and ghee and mix well. Then add the pinch of baking soda and mix well
    5. Cook it to the right consistency till it hardens when cooled. [Tip]: put a drop of the melted jaggery in cold water if it hardens like candy its perfect if its still sticky cook just a little longer till prefect
    6. Now that its the right consistency while still keeping the flame on the lowest level and add in the crushed peanut and sesame seeds, mix well then add the lotus seeds and mix well again till evenly coated
    7. Now remove from the heat and put them in a tray preferably greased so they dont stick to the tray then cool just enough that you can touch them and seperate them then leave to cool completely

    Take these 800 gram and roast them till they are light brown
    (I don't know what are these called in English but I would like to help you guys so I am going to translate this recipe in English )
    after roasting them let them cool aside
    (1/2)Cup Take peanuts and roast them until they r light brown and take them out after that grind peanuts do not make it in a powdery form make sure it looks like the way it is shown in a video
    after that
    (1/2) cup take white seeds and roast them make sure they r light brown do not burn them roast them on a medium stove
    Then take (280) gram of brown sugar break them in small pieces so that you can easily melt it you can add 2 to 3 tablespoons of water so that you can melt it easily do not do not stop mixing it on a light stove so that you won't burn it
    to make a tasty add one teaspoon cardamom/elichii powder
    half teaspoon grinded black pepper and
    half teaspoon Ginger powder
    after that add one teaspoon of desi ghee if you don't have that you can use butter
    one pinch of baking soda make sure it is thick and it should not be sticky you can check it by putting few drops in cold water make sure when you add few drops in water it should become like a crispy chip check it again with the same method make sure when you checking it by putting in cold water it should be hard and non sticky after that add white seeds and peanuts which you have roasted do not close the stove put it on a light heat stove if you will it will be like a hard as rock it would be hard for you to make things in it after that add that thing whatever it is called take a plate Greece It and separate everything each ball when it is hot after that let them cool aside finally they are ready to eat😂 please likes please 😅❤❤

    Roast Fox nuts/ lotus seeds, sesame seeds and peanuts
    Caramelize jaggery using very little water in low heat, spice it up with dry ginger, cardamom and pepper. Add a teaspoon of ghee or oil for glaze. Add little baking soda.
    To check if jaggery caramel is ready, drop a little into cold water, if it solidifies it’s ready.
    Then mix in the roasted ingredients in lowest heat.
    Transfer to an open wide plate and break them apart into single pieces while they are still bearably hot.
    Cool them by simply letting them sit on the counter, serve.
    You can store any extra into an airtight container and shelf it for later.

    Makhana is a species of water lily found in Southern and Eastern Asia. These are the seeds of the water lily plant that are coated in a caramel sauce. I have never tried one, but Ian curious to know what it tastes like.

    English seekers --
    The recipe uses fox nuts
    1. Roast fox nuts until crunchy
    2. Roast 0.5 cup peanuts until golden, grind them coarsely
    3. Roast 0.5 cup white sesame until lightly golden
    4. 280g jaggery - break it up into smaller pieces, add 3-4 tablespoons water and cook very lightly until fully caramelized.
    5. Add spices 0.5 tsp cardamom, black pepper, ginger powder each, 1 tsp ghee/cooking oil/butter, 1 pinch baking soda
    6. Cook until water test is successful. A drop of caramel in cold water should turn crunchy immediately, not sticky.
    7. Assembly - On minimal heat, add peanuts and sesame from before and mix. Add fox nuts. Mix until coated.
    8. Grease a tray and lay the mix out and spread to cool slightly.
    9. While still warm, separate them. Once they cool, they break easily so do it as soon as possible.
    10. Store in an airtight container some place dry.
    Caramel ~popcorn~ fox nuts are ready.

    People from USA this is similar to CrackerJack. Since Lotus isn't easy to come by, just use popcorn, make a brown sugar based toffee. There are a million recipes for caramel corn. You can add nuts, shredded coconut, flavoring- whatever. Experiment! [hint: the caramel corn that comes out light, like hers, has a touch of baking soda added- so look for that version of carmel, toffee...etc corn.

    I make it with almonds!! It's very popular in Germany. You need 1kg of sugar and 300-500 grams of almonds. You have to heat the sugar in a pan until it becomes liquid, then add the almonds and stir it constantly until it caramelizes properly!! It's very tasty and you can buy it at any Christmas market in Germany. But it's quite expensive!!! If you make it at home it only costs a few cents!! Enjoy!!!!! 😊😊

    Fox Nut (makhana)
    Groundnut
    Jaggery
    Sesame seed
    Cardamom powder
    Black pepper powder
    Dry ginger powder
    Oil/ butter or ghee ( you can use any one )
    And last one baking soda
