I have the same kayak. I added outriggers to mine and it's pretty much untippable. Mine does seem to take on water when I sit to the rear of the kayak. Like you I'm a larger fella at 225lbs. I think this kayak would be much better suited to a child or smaller adult. The H12 is a beast and hauls a huge payload without any of these issues.

Change the blind on your sit in kayak and make a low profile slip cover and lay as low as you can that would work way better than the sail you have on there. As for that sit on I’ve got a NuCanoe F12 (yes I know it’s a totally different kayak but it is kind of similar) and I keep my scupper plugs in when padding or using a motor. I take the plugs out if I’m using my dog when I’m set up. In my NuCanoe I take the factory seat out when hunting and I use a MoMarsh Invisilounge seat to get a lower profile almost turning the kayak in to a layout boat. I also use the factory blind. I’ve got a 10’ sit in Pelican that I’ve hunted out of so I feel the pain when it comes to getting in and out.
I leave all my scuppers out except the ones under my seat. I have fished in it in Jan and Feb. I keep a change of clothes in a water proof bag in the hull in case I fall in. I have a 13ft vibe Sea Ghost. If I buy another, I will get the Nucanoe Frontier 12 or one of those plastic Bass Raiders since I too am getting old and feeble haha.
I just ordered stabilizers from YakGear. I hope it will solve the tipping. There are videos on how to make them yourself, but I decided to give these a try.
I got the Ascend Kayak for duck hunting as well. The seat was terrible and always tough to attach. Then I took a long trip south, and the hull warped in the kayak cradle from the tension in the straps. Then the seat REALLY didn't fit well. I finally lost the damn heavy thing in my local river. Not too broken up.

I’m glad I didn’t get the 10T. I got the H10 which is the hybrid. It’s awesome and the weight limit is over 400 lbs.

I have an old town Predator which is way more stable. And I can stand in it to get a better view of a lost duck in the reeds.
