In this video I make a large BBQ knife styled after a K-tip Gyuto. I used a leaf spring that I assume is 5160 spring steel. The handle is made of monkeypod wood. I didn’t have spacer material thick enough for what I wanted, so I experimented with using leftover Kydex as a spacer. Step by step knife making process.

That is absolutely gorgeous. As a chef for 19 years I really appreciate seeing tools made that I would use on a daily basis. I would love to have that knife.

@kevinarnold4795 I was responding to the OP, he said he would like it for daily use. That's a bad idea for a professional chef. He might as well buy a white handle Dexter Russell sani-safe, well this will hold an edge better than that... lol
@@Facetiously.Esoteric Dexter might be good for a line cook....but that edge will never be as sharp and much harder to clean up when it dulls. So no....crap cheap knives are not good...beyond lasting a long time. Which is fine if that is all you want. But you can get that from any cheap blade. And with Dexter, you really need to reset the bevel to be worth a crap to begin with.

@@Facetiously.Esoteric Dexter Russel, Mercer, et al. are great for beginner cooks. I highly recommend them for people with little to no skill, who are just starting out but some of us are way beyond that, we produce food that is elevated and want to work with tools that reflect that. This knife is a robust slicer and it is a work of art. I, like @andresapodaca8853, would love to have one. You clearly just don't have the knowledge and/or skill and/or experience to be speaking to this issue, so go somewhere else to criticize someone who is complimenting the maker, maybe 4chan or something?
Never have I ever seen a knife with this much character. The rough on the blade is perfect. The work on the handle is impeccable. It would be very fair to call this a master piece and a power object. Really amazing.
What really impresses me is the precision with which you can sand such a large sloping surface freehand and without any angle help. Amazing work and beautiful knife.
This knife is spectacular. I would love one similar with burned black jarrah scales.

What kind of job? cut a knife out of a spring? completely without forging, without arranging different steels?
O-Lord, he even hardened the entire knife, although the spine should be left softer and the heat increased for the blade.
If someone cannot cut a knife from a sheet of steel, then I don’t know what’s easier.

The bevels you put on that handle is the kind of thing that needs to be taught in design school. They compliment the angles of the blade in a way that finishes the piece perfectly. Quite literally perfect; anything added would be unnecessary, anything removed would detract.
