We recommend that you have a mix of some sophisticated dishes that take more work and some super easy dishes so that you can manage your time. Our Granny's Prosperity Treasure Pot is a type of Pen Cai 盆菜 that can be made quickly at home. Pen Cai is a Cantonese festive dish that dates back to the Song Dynasty. Typically, some of the most expensive ingredients, such as abalone, oysters, sea cucumber and scallops, are used and served in a large pot or basin for everyone to share. You can also add more ingredients, such as fish maw, roasted pork, and so on, to this dish. Unlike our previous Pen Cai recipe ( • Simplified Pen Cai Rec... ), dried oysters are used in this recipe. If you enjoy dried oysters, this is the perfect recipe for you.

    Granny's Prosperity Treasure Pot 阿嘛发财好煲 (Chinese New Year Pen Cai Recipe)
    Ingredients:
    Serves 6 - 8 pax
    -------
    15g young ginger (sliced thinly)
    4 cloves of garlic (deskinned)
    800ml water
    Brine from 1 can of abalone (about 260ml)
    120ml dried scallop soaking liquid
    2 tablespoons oyster sauce
    35g dried scallops (soaked in 120ml of water for 20 mins - keep the soaking liquid for this dish)
    50g dried oysters (soak for 2 hours - discard the water)
    10 pcs Chinese dried mushrooms (soak until soft - discard the water)
    180g Nappa cabbage
    200g frozen sea cucumber (thawed)
    500g prawns
    Some cornstarch solution
    150g frozen scallops (thawed)
    1 can of abalone (keep the brine for the stock)
    15g long thread moss (soaked for 2 hours - discard the water)

    Looks good. But I usually throw away the abalone brine cos my mum said it contain alot preservatives. I like it that u cook each item according to the timing of the doneness. I usually never put starch cos I like it to turn into soup. It's personal preference. Your recipes is good.
