    Clear, concise and easy to follow. Exactly what I was looking for. Was keen to move away from manufactured, pre-packed products, so you’ve shown me the way to do that. Thanks Tim, I’m around 1 week away from trying this for the first time, so will keep you posted on how it goes.

    Thought I'd give Delia's Christmas Cake a go this year, it's been a good few years since I used her Christmas book for her traditional Christmas Cake recipe, I found it really helpful watching your videos. I thought I'd double the recipe and make one recommended size and halve the remaining mixture to make a couple of smaller cakes, I wonder if you have a suggestion how long these ones should be baked ? Thanks.

    When is the best time to add the decorations - should I do that as soon as I've finished icing...just don't want them to move out of place!

      Again, sorry for the late delay. I would put the decorations on just before the cake is to be unveiled to your audience! Let the icing set and fully dry out then add the decor, especially if you are adding something like ribbons.

    OK to use a kitchenaid instead of a hand mixer for the icing?

      Hi May - sorry for the late reply, I really appreciate your interaction.
      I have never used a Kitchenaid stand mixer (Santa still didn't bring me one!) but I would guess it would actually be better and easier. Hope your cakes was a bit hit!

    I love your motivation but your food transfers are so wasteful! Unless you reclaim it off-camera of course!
    I will be trying this but will not be able to enjoy it until about February 😅 since it's already Christmas week!

      I waste very little. The almond icing scraps are still in the fridge - it lasts for a long time. Scraping bowls I do as fast as I can for the filming, but I try to get everything out.
