I wonder if leaving a hole and using the dehydrator/freeze dryer would work to make more defined crystals?
bigger more defined crystals come from slower growth, so i dont think that would really work

Eyyy, here's some things I found from my own experiments making rock candy. This might help the crystals to form more.
One thing I noticed was you didn't have enough seed sugar, coating the chocolate completely so there's sugar almost everywhere will give you the best results when forming the candy. It makes it more likely to stick and want to deposit the sugar there.
Your sugar also wasn't all dissolved. It looked like you still had flecks of sugar in your sugar which won't let the solution deposit the sugar on the walls of your geode. You have to make sure ALL of your sugar is dissolved or you will end up with the slush you got the first few times.
You also didn't have ENOUGH sugar! When you heat the sugar it should be able to dissolve 3 cups of sugar to one cup of water. Very, very sugary syrup. This is enough that when you leave it in the geode, even if there isn't an air vent for the water to evaporate (which is how a lot of rock candy is formed) there will still be enough sugar when it is deposited. However, it does work best if you can pour it in hot into a heat resistant container... AKA, not chocolate. (=
Also, if you want bigger crystals, the best way to get that is to pour the sugar in hot and let it cool down slowly. It will work at bigger, fewer crystals instead of making as many little crystals as possible. It's pretty fun!
(I don't claim to be an expert, but this was my science project in 9th grade, so naturally I spent way longer on it than any human reasonable should ;)

Borax crystals in a vacuum chamber might be faster. Also try gallium in these tennis balls inside of your vacuum chamber. See if the pressure pot gives any different results.

You could make synthetic geodes by using concrete or some other sort of rock-type mix, and make a small insertion into the hollow sphere, and then get one of those home cooked crystal kits, and put a bit of that liquid crystal mix and bake them.

I'd love to see whole freeze-dried fruit like lemons and apples with out peeling off the skin and then maybe try puncturing some holes in the fruit then freeze-drying them! Think it would make for a cool experiment!
alrighty, so the ++ version should TKOR want to try some more of these; make a silicone mold of a rock. coat the inside of the mold with a thin layer of (hard crack) melted sugar. fill the coated mold with hot (not hot enough to quickly melt the coating, but hot enough to keep sugar from crytalizing out) super saturated sugar syrup, and let it cool as slowly as possible so as the crystals form they are big and stable and stick to the coating. empty out cooled and less sugary sugar syrup and repeat with freshly made, warm sugar syrup to continue building up crystals until desired size is reached. carefully remove from mold. coat in gray chocolate to imitate original rock. enjoy.
