I have a fresh install of what looks to be the same version as yours, but in the projects window I only have 'Inventor Electrical Projects' and 'TutorialData'. Where do the rest come from? Also Create New File is blank and after a while is non-reponsive.

Create a new project file or "Browse" to an existing one to add to your project file list.
