Here is an authentic southern hamburger steak recipe from Northeast Tennessee, where I am from. Lean ground beef, with seasonings mixed in (Grill Mates is perfect), make them shaped like a small sirloin, an inch thick, sear them good on both sides, remove from pan. Fry onions and a hit of garlic until browned, - just past "golden". Add a cup of water to get all the pan liquor in it. Add some flour and Crushed black pepper, mix it all up to the desired thickness with more flour if desired. Add a little milk, never cream. Put the "steaks" back in and simmer, covered for five minute.
Yes, but they will be a bit tougher. I do it that way, don't use any butter, drain off all but 2 tablespoons of grease after removing lightly browned patties. Add 1/2 cup water and onions to simmer to cook but not fry them. Remove onions and simmer off water. Add 2-3 tablespoons of flour to make a loose rue to simmer a little, add onions (or mushrooms) back while flour lightly browns with the onions. Add the broth and stir to absorb rue into a gravy. Stir in milk not cream, add patties back and simmer and reduce. Season for taste. Lot less fat and calories with all the flavor. I do the same with pork chops but use portabella mushrooms and chicken stock. I have pork chops first night and make extra mashed potatoes and then the hamburger patties and add any leftover gravy. I nuke the leftover mashed taders (never instant ones). Some use a can of cream of mushroom soup, but I can't have the MSG. Basically cream of mushroom soup is portabellas, chicken stock, cream, starch and seasoning. Milk works just fine. The onions should be lightly seasoned and sauteed in 2 table spoons of butter and a little water first if butter flavor is desired because the hamburg will make it's own grease and will dilute the butter. Then add onions and patties back into gravy. That's the way I do liver and onions, but no gravy. Saute onions in butter and remove. Fry seasoned and floured liver but "don't" over cook or it will be tough. It fries fast. Remove liver, add onions back to pan and stir in a little water to loosen the flavors from the pan. fry off almost all of the water and put them over the liver, aka liver smothered in onions.
Mr Rytte they will not be tough if you know how to cook them. There is no reason for them to be tough. Every great chef or cook knows to Brown your meat adds flavour.

The type of ground beef will also be a factor. Reading comprehension is important. All chefs should know there are different degrees of browning also, not just yours.

Thank you for sharing this recipe!! I've never thought to put the hamburger right on top of the cooking onions. It looks far less messy than frying the hamburgers first then frying the onions. I'm doing it this way from now on!
when make mine I mix or squish in a package of lipton onion soup into the hamburger before I make them into patties...when I put patties into cook with the chopped onions I brush on worcestershire sauce it make a great gravy...

A low table, placed in front of my chair, Hubby and son, will bring me what I ask for, then, two induction burners, a slow cooker, an electric skillet, and a couple of Instant Pots, allow me to continue to cook meals for my family.

Thats great, you haven't let your disability stop you from doing the things you enjoy. I'm a wheelchair user and find cooking to be great therapy, just takes a little adaptation.
Phyllis Bell I envy that you can still cook! I have severe Rheumatoid Arthritis that took my ability to walk or take care of myself. Multiple other diseases because of the RA. I’m just too weak and in pain. I’m allergic too the medications to treat it so there’s that too. I desperately , desperately miss cooking. It was one of the things I loved to do. I hate that I can’t cook with my grand baby either. She loves cooking as much as me. She has loved it since she was old enough to walk. Fortunately, I have a loving spouse who stepped up to take over the cooking for me and he cooks with my grand baby with my direction. So it’s sort of the same. Wish he didn’t have to though. I’m thankful you are still able too cook for your family.
This is such good, simple meal to make. I've done something similar before, but i put a few slices of bread and an egg in my ground beef mixture with finely chopped onion and some parsley flakes.
I would love to have seen your face when you tasted the potatoes and the hamburger steak. It's cool that you went back for a second fork of the hamburger steak, and amusing. Time is a factor for all of us foodies, especially when we cook. It would be totally helpful to know how long each process takes. Nice visuals. Please remove the paper towels to another location. Just leave the ‘shrooms out, darlin’! It won’t change the recipe a bit! If you’re worried about it changing the recipe, just add a few more slices of potato to make up for the absence to the bulk of the mushrooms and you’ll be fine.

Sweetened condensed milk and evaporated milk are very different.
I like using evaporated milk in cream gravy...it's yummy in mashed potatoes, too...
