In my experience they drop it more often than at the end of the word. When I went to the DR, "estás" would turn into "e'ta"
Yes, it's at the end of words but also before consonants. But you can also hear us pronounce some of these "S" that we would normally drop in random places too 🙂

I’m bilingual and Dominican Spanish is SOMETIMES hard to understand. But they have nothing on Cubans. (Side note/question: I’m want to start a bilingual physics channel. After the family of my ex-spouse liked my astrophysics TikTok they’ve been asking for more videos in Spanish and my English speaking friends have been asking for English physics videos. Don’t know how to accommodate both on the same channel and platform.)
You could either do the physics ones in English and others in spanish, or, and it's a lot more work, make a spanish Playlist and and english Playlist, and basically make 2 of every video. One in each language. No idea how long or involved your videos are, but might work

I think it only sounds bad to you because you’re a gringo. I’m sure when people with other accents speak English it doesn’t sound so bad to you. If you’ve been trying to get rid of your accent and someone starts speaking strongly in that accent, it can sound a bit jarring. It probably doesn’t sound that bad to Hispanics outside the U.S. if you get what I mean
