It might be worth your time to make a guard for use with that type of needle possibly laminating a grippy rubber on either side of a piece of steel or HDPE with a 90 degree bend so you are less likely to accidentally stab your hand when reattaching a welt while still being able to provide a good grip on the shoe.

I especially like that you left the heel plumb, that is straight up and down, as opposed to the concave trimming that I've seen on many other RUclips videos. The plumb heel trim, reminds me of my grandfather's engineer boots. How would I send shoes to you? Keep up the good work.
Love your videos and work but riding bike a HD at that the heat and road conditions will abuse the best boots I would like to hear how your soles hold up thank you. I love my nicks or my whites boots when I ride
