Fun Fact:we in Austria call them "frankfurter" which is the name of a town in Germany , and the guys in Germany call them "wiener" which is an Austrian town😄 great video BTW👍👍👍
A US hotdog is most like a Wiener sausage, long straight, and slender. A Frankfurter is shorter thicker, and curved! But your geography is OK.

A "Wiener" in German can also be a person from the city Vienna or Wien in German. I think it's the same with Frankfurter which can also be a person from the city of Frankfurt. 🙂

I'm not sure when I might be making hot dogs like this, but the concept of the "emulsified sausage" can, I think, be applied to making large cylinders of meat for American-style gyros. We'll see how that turns out.

I made a batch dogs using your recipie to the letter. Not buying dogs again. Your recipie rocks. Tasted a hell of a lot better than something you could buy for .89 cents. Will eventually play with the recipie. Larger casings for giant size hot dogs. Next batch trying high temp cheese and dried jalapenos.

Hi my understanding is the goal temp for hotdogs is 165 degrees. And just FYI cellulose casings do not physically allow smoke penetration to sausage so.. adding some smoke flavoring is an idea. Or change to collagen casing. Natural Cassings work also but they are a PIA ...

Everything I’ve read, all two articles, said cellulose casings do not let smoke penetrate into the meat. But you say it did pick up smoke flavor. I guess I need to try it for myself.

What to do after casing without smoking or grilling?....just refrigerate or freeze in casing until ready to use? Or they must be partially cooked somehow?

We like Old-fashioned wieners, with a snap so we use Sheep casings. Thanks for the lead on the casings, for casing less dogs!
Do the sheep casings prevent enjoyment of the hotdog? I think I'd rather have a slim sausage rather than meat paste.
