How to Bake Super Soft Moist Butter Cake Easy

  • Soft & Moist Butter Cake. Butter cake is the first cake I learned when I started baking. I should say it's the easiest cake to make but just need a lot of patience in the mixing of the batter. It is unlike moist chocolate cake or sponge cake which can't be over mixed. Butter cake takes double or triple the time especially in the process of mixing the butter and sugar. We need to make it as light, soft and fluffy as possible so that the cake will not sink, as far as the butter weight is concerned. Overall it is still easy to make, just take a little longer than normal cakes. I hope you will give this a try :)
    Ingredients:
    250g (1 cup) unsalted butter (you will see the g on the packaging)
    200g (1 cup) castor sugar (you can add another 20-30g or 2-3 tbsp more if you like it sweeter)
    5 eggs
    230g (1 3/4 cups) cake flour or all-purpose flour
    1/2 tsp baking powder (I apologize about the typo on the video, NOT baking soda)
    50g (1/4 cup) milk
    1 tsp vanilla extract
    Note* I don't normally use cups in all my cakes. I have the measurement in internet source. Should you think the cup measurement seems not right, please let me know. Thanks
    I am using a 7x7 inch square baking pan. You can also use a round baking pan or loaf pan.
    Instructions:
    1. Preheat over at 320°F / 160°C.
    2. Sift the flour and baking powder. Set aside.
    3. In the mixing bowl, add in the butter and sugar. Mix it on low speed for 2 minutes until the sugar disappear. Then increase to medium speed and mix for 15 minutes. One of the keys to this butter cake, these 2 ingredients must be mixed well. Continue mixing until the butter is white, light and fluffy. You will see that in about 15 minutes.
    4. Add in the eggs, one by one. Mix until the yellow eggs disappear.
    5. Add in the sifted dry ingredients spoon by spoon. This is another key to make good butter cake.
    6. Add the milk and vanilla extract. Continue mixing for another 3-5 minutes.
    7. Pour the batter into the baking pan. Bake at 320°F / 160°C for 55-60 minutes.
    8. Test the cake using the cake test.
    9. Cool the cake on the cooling rack for about 15 minutes. Once it is cooled, you may cut and serve the cake.
    *Note: Feel free to use a hand mixer, if you don't not have a large mixer.
    Frequently Asked Questions :
    1. Why do I need to mix the butter for so long?
    I learned this recipe from my aunt. It kind of like passed down in the family. But after making this cake for many times, I finally understand why. Butter is a very heavy content, and you know this is a butter cake. It's like the main character in this recipe. If you don't mix it long enough, it will become clumpy and that's why your cake will sink. If only you are baking a regular sponge cake which doesn't consume much butter, you don't actually have to mix so long. However, they normally rely on a lot of air leven ingredients, b soda & b powder. This cake on the other hand doesn't quite rely so much, only 1/2 tsp of b powder, that's it. So the mixing of the butter and sugar is the key, which will eventually make the cake rise and soft and light.
    2. Why is my batter so thick when the one in video is thin?
    It's fine and absolutely correct if yours is thick. The video is thin due to my room temp and time taken for shooting became liquidy that day.

    Hi there. In this recipe, I have used cake flour but you can also use normal plain flour. Please refer to my written recipe in the description box. I have made a slight typo in the video. It's baking powder instead of baking soda. I apologise for the inconvenience. Hope you enjoy baking. Thank you for watching 😊
    P/S: if you are going for a try, I just want to ensure your success. 1.Preferable room temp butter but not melting stage, just softened will do. 2.Make sure you preheat your oven while preparing for the cake.
    3.Next, the key to the success is you need to mix butter and sugar long enough until light and pale.
    4.I know I stated to mix at the end for 5 minutes, you may just do 1-2 min on a very low speed. This is to avoid dense cake. Just make sure there is no lumps in the batter.
    5. Have the cake baked in the middle rack with top & bottom heat with no fan. Make sure you check your cake at the end of the baking time, use a skew or toothpick to test, and make sure the cake is not wiggly when you bring out the cake. If it is, you will know you need to bake another 3-5 min, depending on individual oven.

    Yes. I mixed the butter and sugar at Low speed for 2 mins and increase to medium speed for another 15mins. Then I add in 1 egg at a time till the yellow yolk is mixed then I add in the next eggs till 5 eggs. I fold in the flour spoon by spoon using the stand mixer at Low speed. All the while is using the stand mixer. As for my oven, I set upper and lower heat. I placed my cake one step below the middle rack as I was afraid that it might be burnt. The cake Color looks nice except the inside is dense and did not rise. The texture is hard, not like yours, looks soft and fluffy. I bake at 160C for 55 mins.

      Small adjustment. For your next bake, try this. For butter and sugar, just mix on high until creamy fluffy and pale, for about maybe 5 min would be enough, since it's high speed. Then switch all the way to low speed,, and add in the eggs one by one. And then spoon in the flour, switch to a spatula to fold in. Since you're using a spatula, you don't have to do spoon by spoon, just in 3 batches can do. Also since you're using a spatula, make sure all flour is fold in well, leaving no lumps behind. And that's it. Your oven settings are correct. I am confident you can do it this round.

    1¾ Cups Cake/Plain Flour
    ½ tsp Baking Powder (Not Soda)
    1 cup (2 sticks) butter + 2 tbsp
    1 cup of sugar
    5 Eggs
    1 tsp vanilla extract
    4 tbsps milk (any is fine), 60g/60ml

    Tips: Instead of regular milk, use buttermilk for better flavor. Just mix 4 tbsp regular milk and 2 tsp lemon juice or vinegar. Let it sit for 3 minutes. Homemade buttermilk!

    Having a high amount of Fats and Sugar can help moisten the cake and also in assembling cake you can use a sugar syrup with liquor to make it moist ☺️♥️

    I made this tonight! I amended the recipe a little, reduced 30 gram of sugar & only used 4 eggs. And I actually turned it into butter marble cake, it turned out amazingly soft, moist & fluffy it literally melt in the mouth! Soooo good!     Its really yummy thankyou for the recipe. My husband loves it so much. But i recommend using really fragrant butter for this cake and about 1 teaspoon of salt. It really helps to balance the taste.
    But its really moist, and i substitute my milk for buttermilk as well ! :)

    I'm sorry, but creaming butter and sugar for 15 minutes when you live in a warm climate will never work, you will have butter soup and a greasy heavy cake

      The key is to not use butter that's left out in room temperature for too long. As long as it's soft to the touch you can cream with sugar. That way the butter incorporates well w sugar. I live in Sg and followed this creaming method and my cake turned out beautifully.

      @@Demetttttt yes it is, and very fragrant. Nothing at all like sponge cake in my opinion. Having said that, I dunno what kind of birthday cake you're planning to make but this cake tastes very rich (buttery, fragrant and sweet). So if you're gg to top it with icing, perhaps do a lighter taste icing...? Just a suggestion, coz it's really up to you 😁

    This is a fail proof recipe guys! I tried it out . This will be my go to recipe for the perfect sponge butter cake. I ate around 5 to 6 big pieces in one stretch. I'm skipping lunch.lol. Also I think I want to try this recipe once again this time I want to increase the quantity of vanilla extract from 1 tsp to 2 tsp. Also I think 4 eggs would be enough.

    Okay just finished making this and it was amazing!!!! I was honestly surprised at how good it was considering the simple recipe! :D
    I added a little more milk but not a significant amount more that recommend, all the time spent mixing the ingredients is honestly worth it!!!! Good luck to everyone else who gives this a try c:

    I made it several times, changing the vanilla extract into rum essence and ube essence. They came out so good and moist. I use salted butter because I always forget to put salt in, the salt gives depth in the flavour. Today I'm going to make one using Pandan extract which I made from the scratch. This recipe is definitely a keeper, my family and myself love it. Thank you

      Possible you needed to leave it in the oven slightly longer? Try 5mins extra

    Made them today, turns out very good. I've made plenty of butter cakes before but this is the best I've made so far ❤ Added about 15g extra sugar and I think thats about right amount if you're a sweet tooth person like myself. Anymore than that might be too sweet. Best recipe and tips!!!

    1. I would like to know what setting did u use for the oven? Mine have the conventional with top and bottom heat. And the other one is using a heating fan.
    2. Whats the different if theres water at the bottom and without water at the bottom? Both makes a spongy cake right?

      By adding more dried candied fruit, like Orange, Cherries, Lemon, you'll get closer to the classic British Tea cake!

      Cakes were made without mixers for centuries and can still be made without one. You don’t need a mixer to make this cake.

    I made this today. I always come with problem. haha... I reduced the size to 7in round... and tested the doneness by inserting a bamboo skewer and it came out clean. no batter. so I removed it at about 45mins. however when I cut it, the center is a bit wet and soft. Hmmm.. is there any other better method to test the doneness?

      thats why i used alot of vanilla and i replaced the baking soda with baking powder, try it this way...it will help

    Trustable recipe you guys. I made this a few times now and it comes out perfect all the time. Everyone loved it and keep asking me to bake more for them.     I did the times and settings exactly and my cake had a thin border of cake on the edges and a thick dense dark yellow streak of dense tart like part in the middle

    Tried this today and turned out great. The cake was super fluffy and perfectly baked. I baked for about 55 minutes and also used salted butter still tasted great. The only thing I wish it was more sweeter.

      Salted butter makes it taste as if the the sugar content is low. Same thing happened to me. Try with unsalted butter it tastes perfect
