He's her unicorn. Just like she loved/treasured the unicorn most from her collection, he was, in her mind, apart from her family the only other magical creature that might love her and care for her the way she imagines the unicorn to do so. She was in love with him in high school and still carries that with her, especially after they kiss. Her fantasy, Jim, or, the Unicorn, up to that point might have had a shot at coming true. Alas, he was engaged to a real girl and broke the fantasy. In this case, breaking this fantasy only causes her to pull away from the real world and fall entirely into the whims of her glass menagerie. She gives him the unicorn, simply, because he IS the unicorn in a way. Just as he breaks her heart by not being able to be with her, he too broke the unicorn's horn itself.
