By having Inquisitors instead of using Vader, the galaxy has no idea how many there are. They could be legion and appear anywhere at any time. If Vader was doing it all, it would become known he was the only one hunting them. Plus Vader *wanted* to hunt them and I think Palpatine didn't want Vader doing what he wanted - Palpatine wanted Vader to do only what Palpatinie wanted. By not allowing Vader to hunt them, it reinforces Palpatine's control over Vader.
Why does the Empire need Inquisitors? 1) Darth Vader is but one being, he is powerful; but is still just one person who can't be everywhere in the Galaxy hunting down leads, interrogating witnesses, and confronting the Jedi Fugitives while also preventing them from recruiting other force sensitives falling in the hands of the remnants of the Jedi Order. 2) The galaxy is vast, so having a group of force sensitive agents capable of detecting other force users tapping into the force within their area of operation is very beneficial in routing out hidden jedi. 3) Fear mongering, Inquisitors not only spread anti jedi propaganda to the wider galaxy further tarnishing the image of the Jedi Order but their dogged efforts in hunting Jedi also drives many of the remaining Jedi into remaining in hiding and not raising up resistance movements against the empire.
Ret I believe you're missing an important aspect; that the legacy of the Jedi, were being protected by communities of the Empire. Why protect these individuals? The Inquisitors leads came from stray stories of Force use, where they had to work to triangulate their Jedi. In the process they killed and maimed at will. All of this drove the many communities supporting the Jedi, to work against the Empire. A smouldering ember here, a spark there.. and Palpatine gave birth to his own rebellion. The Jedi in hiding used their abilities to help many communities and their deeds could never be stomped out. The whispers that the Jedi were good and helping them spread.. The fear Palpatine stoked, even with Vader worked against him. The Empire's death spiral started this way, slowly and surely gaining momentum.
Vader in canon is more focused on researching and Discover Power over Life and Death (which ironically continuing the research where Plagueis left off) as it was shown with Vader comics and Vader immortal game.
I always thought they were insurance for Vader just in case he ran into someone close to him in power and he had an off day and needed backup, although theirs not many, Vader was probably in the top 5 most powerful Sith Lords ever even with his injuries.
Havent yet watched, but from what I've read before, palpatine didn't need the inquisitors in fact he knew not all Jedi had been killed in order 66. However he didn't even view the survivors as a threat. He basically did it because Vader wouldn't give up the pursuit (knowing obi wan was still alive and wanting revenge) in summary; he did it to shut Anakin up
Maybe Palpatine saw merit in giving Anakin a team to be master of, after having just lost/destroyed the Jedi Order, plus the loss of Padme. It wouldn't only assist him in hunting Jedi, leading the Inquisitorium would also keep Vader distracted from overturning Palpatine himself.
The inquisitors are necessary for story purposes. It can’t always be Vader, because Vader is too strong and has script immunity. You need adversaries that are an actual threat, no so strong that it is absurd that the protagonists could win. The antagonist needs to have an unknown future, leaving open possibilities of surprise, change, or death.
Like Retney says at the beginning, "The need to both eradicate and demonize the Jedi was the Empire's top priority". We see that Disney is doing the the same thing for its shows, both eradicating its fan base (thus the franchise) and demonizing the Jedi.

Because he knows nobody expects them with their chief weapon, surprise, surprise and fear, their TWO chief weapons, surprise and fear, and an almost FANATICAL devotion to The Emperor, their THREE chief weapons, surprise, fear, an almost fanatical devotion to The Emperor, their FOUR chief weapons, surprise, fear, an almost fanatical devotion to the Emperor, and nice black uniforms, their FIVE chief weapons......
Well, they needed red blades. But given that they are not Sith, I assume Palpatine allowed them to bleed the crystals of their own Jedi lightsabers, whereas Vader had to kill a Jedi and take their crystal since he was a Sith Lord.

I think even on his off days he was fine. Unless it was a master level Jedi like Cere or Obi-Wan I don’t think Vader would have been too worried.

As per your previous video having a dozen or so inquisitors having to "bleed" their crystals seem not only impractical, but a colossal waste of time.
