Lidia…. Beautiful recipe. I have a question. I’ve heard that marinades cannot be used for the sauce because raw meat has been soaking in it and it’s contaminated. So when marinating you should set aside a portion of the marinade to add later and cook with meat for the sauce. I’d like your opinion on this subject. Thank you. ❤
you probably could use it as a sauce but you would want to being it to a boil/simmer for a while. maybe add some water before doing so because its going to condense. however, your idea of setting some aside is also fine and maybe arguably safer as far bacteria from the raw meat being concerned. anyone else disagree here?
Liquids like marinade are easier to sanitized since boiling kills most of the harmful bacteria. Setting aside a marinade can be done but not necessary if you cook the marinade into a sauce throughly.
This looks absolutely delicious. I always marinade my London broil overnight as well. I'm definitely going to try the recipe for your marinade. And in reference to what that man commented above... I can imagine Lydia being busier than all of us put together. Between her regular life, her restaurants, her show, social media, her children, and grandchildren etc etc. That comment was uncalled for, extremely harsh, and rude.

The marinade cooked during the oven cooking process so it should be safe to eat. She cooks it even more on the stovetop, so it’s definitely safe!
