  • Making gluten free foods like regular foods is a challenge, especially when not using gums which are important in gluten free recipes. I have spent a lot of time to study the methods and made some recipes. I am very satisfied with them. The recipe I'm sharing today is super soft gluten free wraps.

    Ingredients:
    120g Rice flour
    80g Tapioca starch
    120g Mashed potatoes
    2g Salt
    125g Water

    Lucy, thank you for the great recipe! This really inspired me. Do you think the mashed potato can be replaced by potato starch and water?

      You are welcome! I don't think mashed potato can be replaced by potato starch and water. They have very different characters.

      You are welcome! I didn't calculate the carb content. It must not be low.😂

    你好 自从上次试了你的饺子皮配方, 最近一直在给女儿包饺子吃 🥰真是超级好用。 不知道可以多包一些冷冻保存吗? 女儿这两天在问我可以烙春饼吃吗, 准备试试这个, 另外刚看了你的春卷皮视频 配方比例略有不同, 这个卷饼皮能当成春卷皮来用吗?谢谢

      没有试过冷冻饺子,但我会冷冻一些土豆泥、番薯泥,用保鲜膜包成一大片,用时微波部分解冻(不要感觉变热了),掰下来用,用多少掰多少,用不完的又放回冷冻室。这个春饼皮可以做春卷,另一个视频里已经做了,用了橙色番薯泥。

    This looks so good. Do you know if I could substitute some other flour for rice flour? I have problems with rice

      I haven't tested other flours. You can try corn or sorghum flour.

      @@lucymeishinobinderglutenfree thank you. I am going to buy your book and experiment with a way to use something other than rice flour. I may try cassava flour first (not the same as the tapioca flour/starch). So many great GF recipes use rice flour and that’s always been a challenge for me.

    I love and appreciate all of your videos! You answer so many questions I've had since I was diagnosed as gluten intolerant. I have one though.
    Do you always use rice flour to dust on foods and your board?

      Most of the time I used tapioca flour. Rice flour was used in this recipe, because the combination of rice flour and oil can layer the pieces of dough after cooking.

      I think it can when you make it a bit thicker.

    I don’t use metric for my cooking. Dour er put both measurements up so we here in the states can easily understand this n making it is easier for us. Many thanks

      Making gluten-free flour-based foods requires accurate weighing. Small changes in moisture can make the dough difficult to work with.

      I've found a kitchen scale easy to work with. I actually prefer it to using measuring cups, now.
