Your diagram is wrong. The 10K resistor is between S and V to pull up the sensor signal to +5v output. When knocked it gives a short ground output pulse on S. This sensor is very insensitive and needs a very strong knock for the spring to move and touch the contact.
2:37 the schematics is not correct: the left pin denoted as Signal is currently not connected to anything and will get the power on a knock. it should be arranged so that the Signal pin is pulled down with the resistor to GND and once it detects a knock it signals high

It's not a knock sensor module. It's just a know sensor. The module will be the raspberry board programmed for acting as a knock sensor module
