Fast glass gives you options....thats why gear reviews focus on the fast lenses, you can stop down when needed but you can't open up if the aperture isn't physically there. Yes there is a correct aperture to use in a given situation and wide open is not always correct.
True but some lenses like 24-105 and 24-70 f2.8 Mark I there isn't much in the difference of sharpness. Like for event photography I do feel I'd benefit from having an f2.8 but thats more to reduce higher ISOs. For everything else the f4 lens works better for me.
I love to shoot wide open but there are times where that will ruin a photo.

I love this. I’ve been going crazy about what lens to buy. This has helped me tremendously and is keeping me from spending money I do not have on super expensive lens.

I use a bunch of f5.6. I have 2 prime lenses a 35mm f2.8 and a 50mm F1.4 that cost me about $100 each and I got an older sigma 17mm-70mm f2.8 to f4.5. I like the flexibility of having the lower aperture but I mostly shoot f4 to f5.6 for portraits.
Like no question it can be great to have the option to open the aperture up and get a nice blur but it's not always needed and I just felt ya never hear about it.
My 80% lens is the Sony 24-105 f4,app at 5.6 to 8.0
