    Non avrei mai pensato di scoprire un canale in cui il video di cuccina parla per sé ! Musica discreta di sottofondo, ottime riprese video e soprattutto piatti eccelenti che ti fanno venir voglia di mangiare subito! Grazie per i video in cui l'unico attore è il cibo invece e il cuoco è diventato davvero il regista perfetto!!

    That's how i make it, but I love the Scamorza addition! I Also sometimes grill the eggplant for the smoke flavor. Nice one!

    Ed ora che ho guardato il video ho di nuovo fame. Mi permetto di darti un consiglio, anche se sicuramente lo saprai già, se infarini le melanzane senza "spurgarle" col sale (quindi dimezzi i tempi) ottieni pressoché lo stesso risultato. C'è chi addirittura le passa in farina/uovo/farina ma per me diventano un po' pesanti 😂

    One question though: I really love frying slices of eggplant i olive oil - Gives it at great taste. Is there a reason for deep frying in cannola oil instead of a regular fry in olive oil?:⁠-⁠)

    I LOVE eggplant. Got several and decided to try polpette di melanzane. I should have done this instead. While good, it's just not the same.

    I made your other lasagna like 4 times already. I just ordered a Benriner mandolin so when it arrives I'm making this. I have to order a glove though! Can I use whole wheat freshly ground flour?

      Wonderful! You can use any flour but AP works best for this kinds of recipes

    Great video! Usually you pair your meals with a nice alcoholic beverage, you have specific brand/type recommendations for this? (Or is that too product-placementish?)

      Not really. It’s just what I prefer at that time. Pizza with beer, eggplant parm probably with a cold white wine!

      If you salt the eggplants well, they release the moisture and that will help with a dry and crisp deep frying!

      Not really. It’s a good oil way better than vegetable! Especially when you don’t want to waste good avocado or olive oil for it!
