Mi permetto di darti un consiglio, anche se sicuramente lo saprai già, se infarini le melanzane senza "spurgarle" col sale (quindi dimezzi i tempi) ottieni pressoché lo stesso risultato. C'è chi addirittura le passa in farina/uovo/farina ma per me diventano un po' pesanti 😂

Not really. It’s just what I prefer at that time. Pizza with beer, eggplant parm probably with a cold white wine!

Looks glorious! Isn't it too heavy/oily with the deep frying of melanzane?
If you salt the eggplants well, they release the moisture and that will help with a dry and crisp deep frying!

Not really. It’s a good oil way better than vegetable! Especially when you don’t want to waste good avocado or olive oil for it!
Per esperienza puoi evitare di salare e lavare le melanzane basta infarinarle e friggere..provare x credere
