This method that you will see in your video guarantees a 100% straight sheet of PVC with unchanged quality of PVC.

How thick is the wall of that pipe? I feel that my 2.5 mm pipe behaved very differently from what i see in your video - it tried to roll back once it get soft.and if i heat it up further, is starts melting.
Look for another model of pipe. However, plastics have different properties.

An iron with parchment paper also works no flipping
The parchment paper stops sticking, but the flipping is to destress the plastic so it does not try to return to round, which would buckle it.

Are you sure that's PVC? You generally can't cut PVC with a knife, but you can with ABS, and a lot of pipes are also made out of ABS... You can also form shapes with PVC by heating it, but it is generally much more rigid & less workable than what you're showing, which leads me to believe that you have ABS there...
Across Europe, grey pipes are catalysed with thin walls, the red ones are thick-walled.
