    INGREDIENTS:
    (stock)
    2 dried shiitake mushrooms
    1 cup water
    1 cup uncooked Japanese rice, washed
    1 1/2 inch piece carrot
    3 inch piece burdock
    handful of shimeji mushrooms
    handful of maitake mushrooms
    2 oz. chicken thigh
    (seasonings)
    2 tbsp soy sauce
    1/2 tbsp sake
    1 tsp instant dashi powder

    My new favorite cooking show. I have redesigned my kitchen to have two cabinets filled with Asian condiments and utensils because of these two wonderfully great cooks. I love their interaction with each other. Bravo

      Me too. I did that after watching these chefs. Try their agadashi tofu recipe. I make it all the time so easy and these two are darling in it. Jet Tila, also Chinese, makes the best chicken lo me in. EVER!

    I'm vegetarian and this looks like an amazing base for so many vegetable dishes! Can add onions, sprouts, peas, anything really! I've never made rice with anything but water or vegetable stock so this should be great.

    Omg! I have been looking for this recipe. It was served at Tissage Hotel Naha in Okinawa. Their local miso is also served there. Had seaweed in scrambled eggs for the first time. Not sure on that yet. Thank you!!!

    i started to make the broth for this dish this morning. i'm not a big mushroom fan, so i only have one type of mushroom. i made omurice for the first time last week and my picky eater ate it all up! and my hubby also liked it. i made it into onigiri and i now make it at least twice a week for my kiddo.

    I made takikomi gohan before using carrot, kombu, shiitake, scallions, and a lobster just cut it in half then chop the halves in chunks. It was oh-so-good!

    Hi guys, thanks for posting this recipe and especially for dividing the actual cooking stage into 3 parts with a detailed breakdown of which heat to use for how many minutes... I'm just learning how to cook and controlling heat is my worst enemy, but your instructions were super-helpful and the meal came out great! Love your channel, keep it going!

    I love takikomi gohan! My mom used to make it all the time, and she made grilled onigiri with the leftovers every now and again! She also used to sharpen my pencils, like you did with the gobo. ☺️

      I love takikomi gohan, too! Yaki onigiri with the leftovers sounds so delicious. That must be a good memory.
      My mother sharpened our pencils with a knife, also, and insisted on teaching me how to do the same! She said I had to learn it, and everyone should know!

    I didn't have chicken, gobo or the shimeji mushrooms, and still it came out great! With the maitake and shitake mushrooms, carrots and the remaining ingredients, it was awesome. I could only imagine that chicken, gobo and Shimeji adds a lot of flavor. We can't get gobo here unless you go to a large city, 3 hours away.

    im making it right now, but i dont have instant dashi or burdock, and im vegetarian 5/7 days, so i used some chicken bullion instead of the dashi, and added extra brown cap mushrooms instead of chicken, and it smells sooooo good.

    I've made takikomi gohan once. I used water seasoned with soy sauce as the stock, ad the veggies i used were carrots, onions and potatoes. It was good!

    This looks really good! Well, how about chestnut rice? The chestnuts in America mostly died, but we get imported ones sometimes, and people keep trying to grow them here. So, it's kind of special when you get some, and of course I'd like to "stretch" them a little, too. Thanks! I really enjoy the simplicity and clear explanation of your recipes.

    Please do a Takikomi Gohan series! I spent my young childhood on Oahu, and remember my father's friend, a Japanese Hawaiian man, would always show me the bento his wife packed for him. One of my favorite memories was an inari sushi she made packed with takikomi gohan. I can still remember the delicious smell!

    Looks really tasty and healthy and easy to make and downright comforting. As to what to pair it with? My thought was that since it already has meat and rice, I'd pair it with a salad and call it a day. Looks scrummy. :)

    EDIT: Thank you for showing this with the use of a pot instead of a rice cooker. I think I must be old fashioned, because I know rice cookers are found in lots of kitchens, but I still can't bring myself to buy one. I mean, once you know how to make rice with a pot, it's pretty simple. It's nice to see this recipe using a method I use. :)

    I love Takikomi Gohan. It's one of my favorite dishes. But I love any rice-dish in general. Very untypical for a German to love rice more than bread or potatoes. XD

    The serving suggestions at the end are always very helpful :)
    Is there a good substitute for the maitake mushrooms? I'm not sure I can get them here. Hopefully can find the burdock too.. It would be such a shame to not be able to try this, it looks fantastic!

    I enjoyed the video. My first from TabiEats. I don't see you responding to any comments but I'll ask anyway. Dried shiitake in water is not a dashi stock which is somewhat more complicated.

      Actually we do read all the comments :) We call it a shiitake Dashi. Dashi simply means stock in Japanese.

    That looks sooo good. I want to try a vegetarian style in my rice cooker. Fall is sweet potato time right? Do they still sell roasted sweet potatoes on the street in Japan? Maybe that's more towards winter?

    Recipe is perfect. Just a helpful note, if you use brown rice, you should plan to add a bit more liquid and cook for ~15 min longer.

    for anyone asking what to substitute the burdock root with: if you live in europe you could use black salsify [no clue though if that plant exists anywhere else]

      MizzBee13 Hi, I have a rice cooker, and I make this in my rice cooker. I have a booklet that came along with my machine, and it actually has a recipe for takikomi gohan in it. Maybe yours has a booklet, too, and that will answer your questions. I can tell you how I make it. I measure the amount of rice I want. I add the liquid from soaking the mushrooms (you can stir in the dashi powder with it), then add water to the level you need for the amount of rice you are using. Add the additional ingredients on top - the carrots, burdock, and chicken along with other flavorings (or whatever ingredients you will be using). I like to stir them in. On my rice cooker, there is a setting for white/mixed rice. I cook on that setting, and that's it. Good luck!
      PS My instruction book warns me not to do a full batch of rice when making takikomi gohan, since you are adding so many extra ingredients. I have a small rice cooker, and I use one scoop of rice for this recipe. It makes a lot!
