How to Make Suno-Mono (Vinegared Salad)【Sushi Chef Eye View】

- A whole octopus is pretty much edible and you don’t have to waste any. The octopus head is also the tasty part, but because of its ugly structure, it may not be suitable for sushi. This video introduces you suno-mono, the vinegared salad, one of the traditional recipe of a popular appetizer.
[Ingredients (4-5 servings)]
Boiled Octopus: head (50g), or 1 leg
Cucumber: 1 piece
Dried Seaweed: 1 pinch
Rice Vinegar: 4 tbs
Sugar: 2 tbs
Mirin, Dashi: to flavor
Sesame Seeds: 1 pinch
rice vinegar and sugar at 2:1 ratio
