  • Looking for an easy, small-scale tortilla de patatas recipe that doesn't use too much oil? This recipe is perfect for one or two people and only requires three main ingredients: eggs, potatoes, and onions. By keeping the ingredients to a minimum, the flavors of the potatoes and onions are able to shine through. When cooked properly, the tortilla will be moist in the middle and have a beautiful golden-brown exterior.

    I just made it! Delicious! I just add a little bit of garlic powder, just because I like it with potatoes. The flavor of the caramelized onions is deliish! Almost the same as the one my Spanish friends prepare. Thank for the recipe for two!

      you shouldnt put garlic. its like putting pinaple on pizza. if your adding anything, it would be some chopped up cilantro. you chop it up and mix it up. with everything before you uput it all in the pan to make the tortilla

      I made this also just now! added a bit of tabasco on top. it doesn't look as good as on the video, but like... 80% there. also, potatoes are cooked well and tastes amazing!

    My dad used to make us these since I was a kid. Sometimes he'd put chorizo or cheese or various other things into the mix. It's a pizza in that respect. I liked em warm after sitting for a few minutes enough to not come apart, but they are also delicious sliced out of the fridge the next day. Tortilla Ethpanyola they pathatha!!

      @dzgknw yes you can do. Or once the tortilla is cooked, slice it through the middle like your going to cream a cake and add the cheese and ham. Rewarm and enjoy.

    Pretty good! I highly recommend making a bigger one, you will solve a couple of meals cooking once. Tortilla de patatas it's also delicious cool, so you won't even have to reheat it. Amazing with a slice of "pa amb tomàquet" (bread with tomato). Also works for a sandwich with baguette type of bread (the baguette with tomato and olive oil instead of butter) if you have to be on the go.

    Do you have suggestions on what to replace the onion with? I know I can just exclude it but I wonder anyway. My sister hates onions with passion but I want to cook for her.

      Shallots make a great sub for onions. Their flavor is milder and sweeter, with a noticeably lower pungency. Leeks are another option to consider.

    Good technique except there really is no reason to let the egg/potato mix sit in that bowl for 20 minutes. As soon as it's well mixed, pour it back into the pan and continue as shown in the video.

    Nice recipe. I have made this many times over the years and your version seems easy.... The best I ever had was at a restaurant in Barcelona. They said they used a secret ingredient, but I never found out what it was. 😐

    What does covering and leaving it for 15-20 mins do? Also would adding just fried hot potatoes to the egg cause the egg to scramble too early or does that not really matter?

      Resting the mixture for 15-20 minutes allows the flavors to meld together and makes the omelet easier to handle. While you can combine the uncooked eggs with the potatoes and onions while they're still hot, be sure to stir them immediately afterward to prevent the eggs from starting to cook. (In this video, I let the potatoes and onions cool for a few minutes while I beat the eggs.)

      If you're using frozen spinach, thaw and squeeze all the water out, then add about 1/3 cup to the egg mixture with the cooked potatoes. For fresh spinach, I would sauté them separately and add to the egg mixture. Hope it turns out well!

    An alternate method is to use no oil. Sauté onions ad salt and pepper and shaved spuds together until brown, then pour egg mixture over the eggs and spuds in the pan. Let it cook a bit. Then fold over omelette and let it cook a bit more. All done with no fuss no muss.

    I'm from Spain and I make Spanish tortillas and they don't have pepper or any species, they only have potatoes, eggs and onion If you like .Spanish tortilla it doesn't have that, you can call it something else.

    Tasted lovely but unfortunately fell apart completely when I turned it. Also stuck very badly to the pan. I followed the recipe exactly. May I blame my frying pan?😂

      Oh no!😂 The pan is the most likely cause of the problem, but the timing of the turning, the resting time of the batter, and the starch content of the potatoes could also have contributed.

      @@kdotwilly7935 About a tablespoon of flour; I have never used cornstarch. But it is a matter of trial and error, as the size of the eggs and how much potatoes/onions you have.
      It should look like a very light batter; lighter than the one for pancakes, more or less like the one for crepes. Good luck.

    The really one isn't like this.
    1st. OK, FRY THE POTATOES, but alone
    2nd. When the potatoes are cooked at least 50%, add the onions over the poratoes and don't mix. Cover and cook low to medium for about 5 minutes. Chek and stir.

    Hi, I'm from Spain and i just watched this video. I have a few things to say. Its not ' Spanish omelette '. Its called a tortilla de papas or tortilla de patatas (depending which part of Spain your from. also, you don't put garlic in that.
    Some other info for when you make it:
    -Your tortilla was a bit ti thin. When you use 2 potatoes of that size, you should use 4-5 eggs and half an onion.
    -no pepper on the potatoes and onions.
    -cut the potatoes and the onion into smaller pieces and put a little salt before frying them
    -fry the potatoes and onions separately, you take the potatoes out when that start to get a golden color and you take out the onions when that start to be a little transparent and that aren't crunchy when you eat them. you should have put more oil when you fried them. when you took them out some were over cooked and some undercooked.
    - when you make the tortilla try to not fully cook the inside. that way its juicy and not really dry. Also, try to have both sides evenly cooked
