I’ve been farming for years and one of my favorite easy summer squash dishes is a brown butter pasta with summer squash and pine nuts and goat cheese. I love this recipe because it’s versatile and you can add what you have growing at the moment. I like to add green onion, garlic or garlic scapes, and fresh basil!
I immediately wanted to call it “Hydrangea Hill” - your hydrangeas are gorgeous and and I love your willow tree! The gardens you’re cultivating are so lovely. Wishing you both success and joy on your wonderful homestead 🌷🌻🪷🌼💐🌾🪺🌿🌳🍄🌱
I absolutely love this video for two big reasons, one the walk-around of the garden is very nice, you show us all the veggies you guys are growing and how much effort it takes for you and Alex to keep the garden bed growing and thriving. Second, and its the biggest reason, is what you said at the end about not discouraging people to do their own gardening at home. Most youtubers only show the good stuff and at the end act as if anyone could just achieve 100% of what they see in the video, disregarding time and money. I love that you said that you guys worked your way up to this point and have been taking the time and effort to get the garden to look like this, while acknowledging the struggles we all may face in growing and maintaining a healthy looking garden full of goodies. Thank you Carrie for being a kind soul, we all need this during these troubling times
Hi Carrie! My name is Dorinda & I just found your video. Your new Homestead is beautiful! Wishing you & your husband many years of love, laughter & lots of veggies & flowers! On your 1st video, I noticed your husband was wearing a Martin Guitar tee-shirt!, Knowing you lived in LA, I was so surprised to see that as Martin Guitar Inc., is located in my backyard . We love to see our local companies being advertised all over the country! Thank you for your educational videos I so appreciate them as I’m a newbie. I will be checking in again soon. Take care
What a beautiful abundance of goodness. So many blessings in your backyard. Lucky you have this because veges in NZ can be very expensive. Thank you for your video ✌🏼
As a novice gardener with dreams of a homestead - would absolutely LOVE to see you in the garden with your knowledge and tips as part of a series!!!! Just lovely🌸✨🌸✨🌸I could watch this as part of a larger series from starting with seeds to growing seasonally. Thank you Carrie this is the garden inspo of dreams!
My parents have had farms in different areas and they (and neighbours) always named their home based on it’s geographical features. I.e. if the property is in a valley, it might have that word in it, River’s End, Glade, Meadow, etc. you get the gist!
I also use harvesting baskets. I just bought a beautiful large one at Goodwill on Friday. I also buy small harvesting baskets because I love to share our bounty with friends and family. The baskets are a beautiful way to present the gift and because the baskets are reasonable at thrift stores i don’t worry about getting them back. Although almost every time i get the basket back with a delicious home cooked goodie inside. Gardening is such a warm, friendly way to share with neighbors. We have a composting bin that even our neighbors are contributing to. I LOVE it! 😮
The name that comes to mind for me is something like “Wide Eyed Homestead” - that’s how I feel just watching you and Alex exploring and bringing to life this slice of the world. It’s a name for a place where you can really open wide to learning and experiencing new things with the pure childlike joy you’ve both described 💞
Hiii, if you love having cut flowers in the house zinnias are the best. I love doing bouquets with zinnias, sunflowers, flowered basil and random weeds for greenery. Love your channel :)
This is the kind of life grew up in. After working in the city for most of my life, I am gradually getting back to gardening and nature. All the fragrances, birds and insect sounds, fruits and vegetables right off the tree and vines, it is a little taste of heaven. Blessings on your homestead.
When you showed us the garden for the first time I knew it would turn out amazing in the summer. But WOW! What you have created with your love, work and patience is outstanding! 💛 Amazing job 💛
So wonderful to see a NZ gardening You tube Chanel.. I love the no dig method.. can I ask you what area of NZ are you in as we are in Sthland and feel blessed to get sufficient rain to water our gardens as we too are on Rainwater. All the best you certainly have an amazing vegetarian plot. I look forward to many more episodes.
Can I just say, your husband is crazyyyy lucky to have you. Your beautiful, respectful, loving, and so much more. He is lucky and this is what a true relationship is all about. Btw he looks like a great guy too. Happy for you two!
I have been gardening and growing food for 52 years and I love your garden. It looks so beautiful where you live. It is still too cold to plant where I live and you woke me up to the excitement of the next planting. Parsley with the tomatoes! I will try that with the basil .
the garden is coming along well Carrie. Im still waiting for my egg plant too, Im in Melbourne Australia my tomatoes, zuchinni, cucumber, tomatillos, bell peppers are going crazy at the moment its awesome. Fingers crossed I will have some Eggplant soon :). I haven't had much luck with brassicas - that horrible cabbage moth. SO this year I decided to grow more tomatoes and tomatillos as I love to make salsa, salsa verde, pasta sauce and can it all up for the year - YUM
Love your Garden!! ❤️ Ugh!!; Also- homestead name: Wayling Willow (play on your last name); Tips for garden: hydrangeas change colors based on the soil PH. Pink grows in acidic environments, and bluish purple in alkaline. You can add amendments to the soil to get a mixture of both, to different areas of the plant, so one side grows pink, the other side grows blue, and if you want a mix of both, you can leave it as is. Also, I think if you touched up the white picket fence, with a fresh coat of white paint, where the white arbor is, it would make it all come together beautifully! ❤️ But, it’s super cute anyways, and I’m sure you guys already have that in the works, with 1 billion other things on your to do list before that can happen… As always, thanks for the great information, and the garden inspiration!. You’re giving me great ideas for my new garden for this upcoming summer in the US… Lots of love! Stay safe, love life, and enjoy the little moments!!
Awesome video. So many items I have not considered for my garden . And now I will include them. Looking forward to your next video. Please consider teaching us how you use these items in your food. Thank you for taking the time to share.
If you want your cut hydrangeas to last longer dip them in alum powder- we cut some from my parents garden for our wedding last year and they lasted 2 weeks after being dipped, rather than just 1 day without the powder!
Butternut squash risotto is delicious! You first cook the squash in a chicken broth, once it's soft you mix it into a sauce (and you leave some small pieces whole - this depends on preferences). Then once you have this sauce, you cook the rice in it, season it and you are ready to serve it. :)
Beautiful Garden 😍 one note on your tomatoes: be on the lookout for blight. Especially, when it rains a lot and your tomatoes are not grown under cover. I lost my entire tomato harvest to blight last year, because we had a very rainy Summer!
I am half Italian and have heard about the use of zucchini flowers in cooking but never tried it. I would love to have your recipe! Caprese salad is one of my favorite things. Sometimes I eat just that for dinner. I recently discovered your channel and am so enamored with the homestead and lifestyle. You are truly blessed ❤️ It’s so Inspiring to see your garden! Thanks so much for sharing. V. Randazzo from CA.
Such a beautiful garden! Absolutely love your garden videos, always makes me feel so happy and complete. I am a gardener myself and love learning from other people, so please make more of your awesome garden videos 🪴💛 xx
My grandma would always make a squash stew with squash from our garden. Not quite sure how she made it but I know she chopped up okra, squash, onion, garlic, tomatoes and just stewed them in a pot and then put it over rice with some corn bread on the side. Soooo good and refreshing 😋
Hi Carrie! I found you lastnight and have been absolutely loving your videos! I am from NZ and its so great to see that you've moved here and are living off the land! Beautiful!
I LOVE your gardening videos! My husband and I want to start a garden but sometimes it’s super overwhelming and it’s hard to know what’s important and what’s not 😄
You should call your homestead “Eden” because it is literal heaven! Or here are a few names in Arabic I thought of: Sehr (سحر) : meaning “magic” Al-Bostan (البستان): meaning “The garden” Bisan (بيسان): meaning “the city of the moon” which is also the city of Jericho in Palestine. Shams (شمس): meaning “Sun” Al-Yasmina (الياسمينة): meaning “The Jasmine” Also, I’m so happy that you know Shakshoka, one of my favourite Arabic foods ❤️
Beautiful garden! Would love to see more garden content. There are not enough NZ gardeners on RUclips. I made the mistake of planting four zucchinis this year so I am currently overrun with them. I have been told to either slice or grate them and put them in the freezer for using in soups, stews etc in winter. Zucchini slice is a yummy savoury recipe.
I love your gardening videos! I would love to see more food-related videos. I’d love to know what a normal week of food looks like for you. What do you make? What do you use from your garden vs what do you buy? And beyond that, how much do you normally spend on groceries?
I followed you wayyyyy back when you started. I loved your videos then, but somehow I lost your channel over the years. I had no idea you were into homesteading and I absolutely looove your channel now. I also garden and want to homestead. Your content is so relaxing and inspiring! Congrats on 300,000 🥰
Hey Carrie! I absolutely loved your educational garden tour and have enjoyed seeing you and Alex transform your homestead. I’ve been managing my own citrus and ornamental trees, veggie gardens and flower beds for about a year since my husband and I bought our own 2.25 acres of land in South-East Queensland (G’day neighbour!) I took some notes as FYIs and tips while watching, I hope they come in handy. The colour of Hydrangea blooms can actually tell you what your soil pH is doing and they work in reverse to the Litmus colours in a pH test. For example, if your soil is acidic, the blooms are blue. I think that the world would be a better place if the orphaned lamb had a friend, :). It is New Zealand and there are sheep everywhere, embrace it! Fr tho, he looks like such a good boy that he deserves a friend, or even better friends!
This video is so well shot + edited. I love seeing how far you’ve come as a content creator! Currently trying to get through a cold, snowy winter in the Midwest US. Your gardening videos are giving me so much inspiration for spring gardening and getting me through the winter!
Very beautiful garden and flowers, good luck. For the grapes, you can use the young leaves for stuffed grapes leaves very delicious. Also some raw grapes juice has a nice sour taste you can use it like lemon juice also really healthy. Or make vinegar after they got really ripe at the end. Enjoy your garden and its products.
Amazing work, you could literally eat from the land, save as you go and build a wide community. A good life :) many kiwi people dream of this lifestyle but for one reason or another aren't quite able to become successful in doing so.
Definitely worth a thumbs up 👍🏽 your garden is booming with goodness and the size of that hearty cabbage is a beauty, I just cut 2 cabbage's, broccoli, and my tomatoes are so delish, my super sweet corn is so sweet 😋 I put netting over my vege patch because of the white moth and it worked a treat, last year I didn't and my broccoli, cabbage, cauliflower got hammered, my silver beet and spinach is never ending, I love going out to my garden and picking fresh vege's not only that it's so expensive to buy, the name you pick for your homestead will be perfect, can't wait to see what you name your beautiful peaceful paradise 🤍 have a fab day you two 💞🌞
I’ve been watching your gardening videos since you guys was still living in LA and I’m so happy for you guys to find a home to settle down together. Also a home where Lanka have a large opening space to roam around in. I think a great name for a homestead is Lanka Point or Woolson Point.
When I have seen the first seconds of this video, I had a very strong "New Zealand Feeling" and a few seconds later it was confimed. Maybe its the light or the fact that it is summer in january. Very great video I really love the tour.
I’m sure you’ve already named your garden by now. I just found this video. Everything is just beautiful. We have a small garden with 51 earth boxes. My mother named our garden “THE GARDEN OF EATIN:”
What a beautiful and peaceful video!! So inspirational and motivational. Please show us how you did your “No Dig” garden beds!! Every bit of knowledge is welcomed 🙏🏼☺️✨ Love your videos!!
Great tour of your beautiful garden! I’m curious if you are planning to can some of your veggies and fruit in water bath and pressure canners? Possibly some jams, fruit compotes, salsa, spaghetti sauce, etc.
Thank you for sharing your garden with me. I just love how it’s all coming 🫑🍅🪴👍together and growing so nicely! I love to garden and I also make garden videos. I in my 3rd year gardening. I have so much to still learn. I’d love it if we could learn more from each other! Happy gardening 👨🌾 🌷🌼🌻🌺🌸🌹🐝
Gosh I love all your videos, I discovered your videos through your hubby's video about moving to NZ. I am dreaming of moving to NZ soon, and tying to manifest to live there for good as well. Hope to meet you in person, I feel you are such a wonderful person. I'd love to learn so much things about gardening, homestead-ing and youtubing from you

That sounds absolutely delicious 🤤 I’m starting my garden this spring so I’ll definitely refer back to your recipe for summer!!
It makes my heart so happy that people moved onto this land and are fully utilizing its amazing potential
The zucchini blossoms can also be chopped up and made into a pancake. It makes a great snack or dessert.

Really? I wouldn't have taught that vegetables would be expensive in NZ. Seeing as it's such a green land.

ah thank you! yes, I plan to keep you all updated. 🙏

One of my favorite relaxing Sunday traditions is watching your videos. Thank you for showing us your lovely garden!
Thank you for sharing! I love watching your homestead adventures, it makes me miss New Zealand a lot!
I have a lot of grapes and dry them to make raisins. I think you need grapes with seeds for wine but you can also get a steamer to make juice.
Hiii, if you love having cut flowers in the house zinnias are the best. I love doing bouquets with zinnias, sunflowers, flowered basil and random weeds for greenery. Love your channel :)

a very nice garden, the plants thrive, the fruits and vegetables all thrive and are perfect
My six year old thinks the name “magical garden” would be a great name for your garden!
When you showed us the garden for the first time I knew it would turn out amazing in the summer. But WOW! What you have created with your love, work and patience is outstanding! 💛 Amazing job 💛
I love how this video turned out. So fun to shoot!

This was so calming to watch on a Sunday night in the middle of Chicago winter! ❤️ I’m committing now this is the year I try to grow something!

This video was SO wholesome! Please do more garden videos I could listen to you talking about it all day 😍
You should call your homestead “Eden” because it is literal heaven!
Or here are a few names in Arabic I thought of:
Sehr (سحر) : meaning “magic”
Al-Bostan (البستان): meaning “The garden”
Bisan (بيسان): meaning “the city of the moon” which is also the city of Jericho in Palestine.
Shams (شمس): meaning “Sun”
Al-Yasmina (الياسمينة): meaning “The Jasmine”
Also, I’m so happy that you know Shakshoka, one of my favourite Arabic foods ❤️
I immediately through “Have Homestead” because it looks like such a safe haven🤍
What a gorgeous property! So happy for you guys! Blessings on this new journey! ✨

8:19 nice zoom Alex. Congrats on your happy life!
This is really well edited and shot, best quality video I’ve seen yet from you Carrie! Love it 💕
Love this video. Would love to see more videos ESP no dig. Can't wait for the Canadian gardening season
I’ve been managing my own citrus and ornamental trees, veggie gardens and flower beds for about a year since my husband and I bought our own 2.25 acres of land in South-East Queensland (G’day neighbour!)
I took some notes as FYIs and tips while watching, I hope they come in handy.
The colour of Hydrangea blooms can actually tell you what your soil pH is doing and they work in reverse to the Litmus colours in a pH test. For example, if your soil is acidic, the blooms are blue. If it’s red or pink, your soil is either neutral or basic.
In Australia, Silverbeet is called Spinach. I didn’t even know Chard was a name for it so thank you for teaching me something new. (just in case you ever visit and can’t find some sort of vegetable in a store or on a menu).
Another benefit of letting nature water your garden (as opposed town water) is that natural water is free of treatment chemicals, which can affect your plants.
In Australia, Pattypan squash is just squash. What you call butternut squash, we call Butternut Pumpkin.
My mum makes the normal relishes, chutneys an jams with her fruit n veges, with her flowers she makes poupori. Also dried upside down roses then frame them.
That cabbage 😍! Love your overalls. Great tour of the homestead
Overgrown Squash/pumpkin are great in stews and casseroles. They store rather well so holding them through winter is good
love this was also curious if you considered offering a local bee keeper to have couple hives on your land my father in-law did this on his and they paid him in honey during the year and they did all the maintenance
I think that the world would be a better place if the orphaned lamb had a friend, :). It is New Zealand and there are sheep everywhere, embrace it!
Fr tho, he looks like such a good boy that he deserves a friend, or even better friends!
With the cabbage, what you do is hug it at the root and twist. It breaks and comes up! Your garden is gorgeous!
This video is so well shot + edited. I love seeing how far you’ve come as a content creator! Currently trying to get through a cold, snowy winter in the Midwest US. Your gardening videos are giving me so much inspiration for spring gardening and getting me through the winter!
LOVED this video! It made me so happy! Can't wait for the podcast to return!
I had a lot of squash last year and made squash pickles. They taste just like bread and butter pickles and they were SO easy to make and can!!
I would love to see a vlog or a cooking video of some of your favorite recipes using the veggies you harvested!
Love all of the garden content Carrie please share all!
Yesss I’m here for that design video! And all gardening videos for that fact. 🤩
So glad this showed up in my feed! I’m gearing up to start a garden. Loved the info on companion planting. I’m excited to learn more!
You inspire me so much. I am about to start my own veggie garden in my home. Thank you for all the tips and motivation.
So good to have you here in nz Loving the video of your valley garden.
Amazing work, you could literally eat from the land, save as you go and build a wide community. A good life :) many kiwi people dream of this lifestyle but for one reason or another aren't quite able to become successful in doing so.
I love watching your garden video. We have raised beds and going to start doing hey bail gardening this year
Would love to see more about the No Dig method. Thanks for your videos!
Awwww thats so cool. Watching ur videos today was like catching up with an old friend. Im so happy for u . Congratulations on ur marriage & move . 😍❤️
