  • Chief cuts tuna in Japanese sushi restaurant. First part is called ootoro (big toro), and is the most expensive part of the fish, the next (bigger) part taken is chutoro (medium toro) and is one rank lower.

    No wonder Ootoro is so expensive, it's like 2% of the whole tuna! It must be incredible to be a Sushi chef, after all that hard work and training, other chefs look up to you, diners look with awe and wonderment at what you do. You create simple yet intricate dishes that put huge smiles on peoples faces. How enlightening must that be?

      AveMaria82100 Yeah, since most people eat it out of a can, they don't realise how massive a tuna can be, especially because its almost solid muscle. The average Atlantic bluefin tuna is larger than a person and weighs about 600lbs.

    I worked on a yellow fin tuna boat in Hawaii for 4 years. I have eaten my share of raw Tuna to last a life time. But here back in the states, I surely miss those days of having and eating all the Tuna I want. Us deck worker got to eat all we wanted as long as it was a Tuna that had been shark bitten. The sharks would rip out the belly and leave it the rest untouched. Tuna at the auction in Hawaii back then were selling for 20 bucks a pound. Best 4 years of my life!!! 15k was all our boat holds.

      Believe it or not that's actually small for an Eyeball. I used to be a professional fisherman and most Eyeballs we caught were in the 125lb. to 200lb. range. It's still a nice fish but on the small side for an Eyeball.

      Eyeball is slang for Big Eye Tuna. That is the species of tuna that the fish in this video is. Many of us who are into offshore sportfishing call Big Eye Tuna "eyeballs" for short.

    Out of curiosity is this tuna fresh off the boat or has it been frozen? I know in the USA the FDA requires all raw fish to be frozen for 24 hours if it is going to be served raw. Does that alter the flavor?

      +tachikoma747 I'm guessing not frozen. Most likely caught the day prior and bought super early that morning. It does alter the flavor and texture as well yeah.

    You're right. It is close to being under "threat" but it is no where near critical endangerment or the adjacent levels. Yellowfin is still kicking and alive in the wild compared to other tuna species.

    Tuna is such a big fish. I wonder how long a family in Japan can eat Tuna before they got the whole thing eaten up.
