I have put in 390 hours since full release, convoys, despite being small can be found closer to the coasts (seriously close, maybe 10km away from shore in whatever direction they are traveling) unless they need to take a wider turn to avoid shallower areas. Other ships that travel alone will typically be between the ports traveling in either direction, I know that sounds obvious but what you should do is use the ruler tool to draw a line from port to port and then traverse back and forth over that line, zig-zagging and doing hydrophone checks in both directions. also, when you hydrophone check make sure to dive to at least 30-40m, slow down and steer your uboat in multiple directions to pick up possible ships that might be behind you. (sometimes you should manually operate the hydrophone, too, your radio man likes to pretend he is deaf sometimes, maybe there is a game mechanic where he takes a long time to determine the distance of the sound, etc. Other times you can go in, take a dip and he has a 4 different contacts in less than 10 minutes Sometimes, although hard to find until later in the game, convoys get huge. and I mean really big. 20+ ships. I was not that good when I started but if you persist a little, you'll be a uboat ace in no time.
Use time acceleration a lot. When you get to a patrol sector, try to travel to each grid. In the middle of the grid, dive to 50 meters and assign two sailors to the hydophone operator for increased range. If you do this in each grid you should find someone. When surfaced you can get tips by radio of ship locations.

Love this game, but am awful... Barely if ever find a ship let alone a convoy to attack. Only a couple hours in. Hoping to gleen some tips here
