at 11:38 the reason why you play the G3 Dragon from the stride deck is basically because it has a ritual ability, meaning it counts for Dragstrider Luard ability and can also be called by Dragdriver Luard. It's a unit that makes pressure and can also be discarded for stride in case you go second.
