When I think about Galicia, my mind takes me to the Costa da Morte, to the Finisterre Lighthouse, to the way of Saint James that ends on Santiago of Compostela but especially I think about Pulpo a feira and the one you did it, Galician Pie. Good technique for peeling and de-seeding the tomatoes. That tuna mixture is gonna amazing the empanada. The dough looks great and I love the addition of boiled egg as well. Love the decorative top as well, serious skills chef. Delicious recipe as always James, keep it up.

I love how you take the viewers though the mis en place. So many new cooks use the ingredients list as a shopping list and then start cooking. That's when the panic sets in as the ingredients they need at that point have not been weighed and prepared.

Empanadas like pis in the UK originate from Europe, so this is Spanish but from the area of Galicia. so do I but carne asada is basically grilled steak with a marinade or seasoning. hope this helps! :)
Thank you for this video. I’m an American whose father is a Gallego. Growing up, my mother and he would make this using bacalao. Would love to give atún a try. Any specific type of tuna preferable? Also, I live on the Gulf Coast of Florida and have great seafood available and wonder what could be a good local substitute. Thanks, Chef!

Just so you know this will take a little bit of work it's a bit of a long process making an empanada so you may want to double or even triple the recipe and do a couple at a time because they can last for a few days. Tuna belly is very good to use, it's very tasty but if it's a little too expensive you can use a cheaper tuna
