Easy mocha muffin recipe. Super soft and fluffy. Easy Baking

Very delicious, quick and easy to make no chocolate chips mocha muffins recipe. Just mix and bake, no electric mixer required.
They will disappear in an instant and everyone will ask for more!
This recipe makes 12 mocha muffins.
Prep time: 10 minutes.
Baking time: 20 minutes.
Total: 30 minutes.
1 tsp instant coffee + 60ml (1/4 cup) boiling water, OR 60ml (1/4 cup) espresso any other strong coffee
250g (2 cups) plain flour (you can use self raising flour instead, but omit baking powder)
30g (1/4 cup) unsweetened cocoa powder
2 tsb baking powder
1/4 tsp salt
2 eggs
200g (1 cup) sugar
125ml (1/2 cup) cooking oil
125ml (1/2 cup) milk
1 tsp vanilla extract
1 tsp white or 1 tbsp malt vinegar
Bake in a preheated oven at 180C / 360F / gas mark 4 for 20 minutes or until toothpick inserted in the middle comes out clean.

I personally haven't tried replacing egg, but here is what I found:
Replace 1 egg with:
1 teaspoon baking soda and 1 tablespoon vinegar or
1/4 cup unsweetened applesauce or
1/4 cup soy yogurt or
Stir together 1 tablespoon ground flaxseed in 3 tablespoons water until thick and gelatinous or
1/4 cup mashed banana or
whirl 1/4 cup silken tofu in blender, adding water until smooth.
