In order to get those classic crispy fries, you have to cook potatoes multiple times. Typically you fry them, allow them to cool, then fry them again to get that crispy texture. Some recipes even call for boiling the potatoes, then frying twice. Cooking three times to get that crispy texture. Most restaurants freeze large batches of fries that have already been cooked and then do the final fry from frozen. This is basically what you get when you buy frozen fries too. The reason In n Out fries taste like that is they prioritize fresh potato flavor over that crispy texture. They cut them in house and fry them fresh but you can't really achieve that texture with this method.

I'm born and raised Californian, diehard In n Out fan and even I'm one of those people that says the fries are meh. I always had the vague feeling it's because I was too used to trashy oily fries, and In n Out fries are like... legit fresh?? They're so fresh they just kinda taste like potatoes rather than french fries if that makes sense?? Reading this kind of confirms that and I feel bad dunking on their fries a bit lol

The fries are definitely an acquired taste. You have to eat them piping hot and fresh with salt & ketchup. They cool off very quickly and taste like bland potatoes…not much of that “fried” flavor that people love about fries.

I know the video has already peaked, but the best order if you can handle a bit of spice is this. I’ve ate more in n out than anyone on earth in 2025 so far. Go when you’re hungry…get a 3x3 animal style add extra whole grilled onions, extra tomato, and extra chopped chilis, and extra toast. Order your fries with extra grilled onions, and extra chopped chilis, and whatever drink you want, I personally go for a large Diet Coke with no ice and a splash of cherry Coke. When you get your order, ask for 2 or 3 packets of spread and a fork in case they don’t give you one, also get salt and pepper. When you get your order put one patty from the burger on the fries, and eat your burger over the fries to not waste anything. Use the spread salt and pepper on the fries. I promise you it’s the absolute best order I’ve been able to come up with. I’ve ate at least 20 in n out burgers so far this year.

Just a perfect storm of bad fries. Root beer floats are fine but a little underwhelming bc there's no ice cream in ino, its just vanilla shake and soda. It is actually floated with a slow pour, but it dissolves so fast.
I guess fries vary based on the store. The standards are all normal but the managers don't allot the time to actually follow through on them, mostly bc volume is crazy and staffing is always tight. Long-term California ino vets can prep a shocking amount of fries in just a couple minutes but they're gonna be dogshit.
My conspiracy theory is that everyone on the West Coast loves In-n-Out the exact same amount but we all describe it differently. People who love In-n-Out know the fries suck but don't care. And people who call it overrated still love the burgers, they are just annoyed everyone is obsessed with it so they complain about the fries (which suck!)

I had In-N-Out french fries for the first time in 2002. My initial reaction was like “wtf is this garbage”. But after having them for over 20 years I now understand they are pretty good. Like a weird anime where you have to get past the first arc to appreciate it.
They don't cover half the US yet. They're very deliberate about maintaining the supply chain to keep up the ingredient quality and freshness. It's still family-owned, so that may even continue in the future.

I've never been a cheese enjoyer, but I do enjoy it on a burger. Double-Single (2 patties 1 cheese) hits the spot just right, I highly recommend! Also, the chili's are a really nice curveball every once in awhile.
As someone who hates soggy bread feel, I didn't realize they had protein style. I wonder if they'd be willing to do "push every topping button" thing with protein style. Guess I'll find out tomorrow!
Rookies need to know that you MUST salt your fries. They come with basically no salt on them. That's why they give you salt packets. Use them. Takes the fries from awful to quite good.

I might be wrong but I think you mixed up the fries. Medium well should still be slightly soft inside, crunchy outside. Well done is just crunch throughout. The well done fries you pulled out look really pale. I eat in n out almost twice a month. Then again, sometimes they just re-fry regular fries and call it "Well Done" and it's just straight soggy. It's very inconsistent from branch to branch.
I will forever be sad that they stopped making anything above a 4X4 after some guys in Vegas got a 100X100 and it freaked out corporate. I would get 10X10 all the time, now I have to go with two 4X4 as my standard order as I rush headlong toward morbid obesity.
it didn't freak out corporate. there were quality concerns because you can't possibly serve even the 75th patty, much much less the first patty, at the standard in n out demands. that's not me glazing in n out either lol it's the same reason they don't allow favor or uber eats to do pickup - they want to minimize the amount of time between pulling the food off the grill and the food entering customer mouths bc they know their food has a shelf life of like 10 minutes, especially the fries. 10x10 is somewhat reasonable as you can feasibly throw that in two rows, one row if you're ambitious and the manager isn't picky. a 100x100 has shit quality, 3/4s of it is stone cold, AND it grinds the operation to a halt, affecting other customers' experience. source: currently employed there

That would be even more work than a single 100×100, still the same temperature disparity between the first burgers and rhe last burgers, and it would effectively halt their business just the same.
@@turtlepowersf if you ordered 50 dubs, we'd require you to call it in ahead of time so we could staff appropriately and open another grill for it if necessary. we wouldn't just take a 50 dub order on the fly because as you said, it's too much. but it's not the same as trying to create some 100 patty single burger monstrosity and expecting it to have any sort of quality at the end. once the burger is wrapped and packaged, it has a much better shot at maintaining heat/quality than a 100x100 which would be exposed to air unpackaged and unwrapped for like 30 minutes while it waits on the rest of the patties to come off

I like the fries purely because I have this really nice jalepeno ketchup at home and the floppy fries are perfect for achieving my desired ketchup to fry ratio.
I love my fries Light. It's my go-to way to get fries at In-N-Out. Y'know those squishy limp fries at mcdonalds you get three of in every box that are long and floppy? I love those. Fry Light is just a box of that. Like, you're never gonna get nice crispy outside with fluffy inside. At best you get medium well for a worse approximation of it. Why bother? Just get fry light. It's like halfway between mashed potato and roasted potatoes. They are delicious.

I've never been a cheese enjoyer, but I do enjoy it on a burger. Double-Single (2 patties 1 cheese) hits the spot just right, I highly recommend!
Also, the chili's are a really nice curveball every once in awhile.
As someone who hates soggy bread feel, I didn't realize they had protein style. I wonder if they'd be willing to do "push every topping button" thing with protein style. Guess I'll find out tomorrow!

Rookies need to know that you MUST salt your fries. They come with basically no salt on them. That's why they give you salt packets. Use them. Takes the fries from awful to quite good.

I might be wrong but I think you mixed up the fries. Medium well should still be slightly soft inside, crunchy outside. Well done is just crunch throughout. The well done fries you pulled out look really pale. I eat in n out almost twice a month. Then again, sometimes they just re-fry regular fries and call it "Well Done" and it's just straight soggy. It's very inconsistent from branch to branch.
I will forever be sad that they stopped making anything above a 4X4 after some guys in Vegas got a 100X100 and it freaked out corporate. I would get 10X10 all the time, now I have to go with two 4X4 as my standard order as I rush headlong toward morbid obesity.

it didn't freak out corporate. there were quality concerns because you can't possibly serve even the 75th patty, much much less the first patty, at the standard in n out demands. that's not me glazing in n out either lol it's the same reason they don't allow favor or uber eats to do pickup - they want to minimize the amount of time between pulling the food off the grill and the food entering customer mouths bc they know their food has a shelf life of like 10 minutes, especially the fries. 10x10 is somewhat reasonable as you can feasibly throw that in two rows, one row if you're ambitious and the manager isn't picky. a 100x100 has shit quality, 3/4s of it is stone cold, AND it grinds the operation to a halt, affecting other customers' experience. source: currently employed there
@seventysevenquestions I get your point....sort of. But would it be any different if I had ordered 50× double doubles? That would be even more work than a single 100×100, still the same temperature disparity between the first burgers and rhe last burgers, and it would effectively halt their business just the same.
@@turtlepowersf if you ordered 50 dubs, we'd require you to call it in ahead of time so we could staff appropriately and open another grill for it if necessary. we wouldn't just take a 50 dub order on the fly because as you said, it's too much. but it's not the same as trying to create some 100 patty single burger monstrosity and expecting it to have any sort of quality at the end. once the burger is wrapped and packaged, it has a much better shot at maintaining heat/quality than a 100x100 which would be exposed to air unpackaged and unwrapped for like 30 minutes while it waits on the rest of the patties to come off

In n out’s fries is THE best. I can’t believe this ProZD. My favorite is Five Guys but it’s because of the seasoning not the fries itself.

I like the fries purely because I have this really nice jalepeno ketchup at home and the floppy fries are perfect for achieving my desired ketchup to fry ratio.

I love my fries Light. It's my go-to way to get fries at In-N-Out. Y'know those squishy limp fries at mcdonalds you get three of in every box that are long and floppy? I love those. Fry Light is just a box of that. Like, you're never gonna get nice crispy outside with fluffy inside. At best you get medium well for a worse approximation of it. Why bother? Just get fry light. It's like halfway between mashed potato and roasted potatoes. They are delicious.
